BREAKFAST—Stewed figs, cereal,
thin •ream. ■cratnNed eggs with
dried beef, crisp whole wheat toast,
milk, coffee. «
LUNCHEON—Clenr soup with
poodles, lettuce sandwiches, surprise
rice pudding, milk, tea.
DINNER—Bi-nised mutton cutlets,
mashed potatoes, new pens in butter,
vegetable salad, junket .fee cream
with raspberry sauce, whole wheat
tread, milk, coffee.
Cutlets should be cut from the Lest
end of a neck of, mutton. This Is
usually considered a "cheap cut” of
ineat so the cutlets should not l<e as
expensive as loin or.rib chops. Trim
off practically all of the fat as it s the
fat that gives the taste most people
dislike. !
Surprise Rice Pudding
Four tablespoons rice. 2 cups rich
milk. 1 table»|KK>n granulated gela-
tine, 4 tablespoons cold water, 1-2 cup
boiling water, 1 1-2 cups sugar, 1-8
teaspoon salt, 1 teaspoon vanilla. 1
cup whipping cream. 2 cups stoned j
Bl cherpies.
■ Wash ri<e through several waters.
■ Cook in milk until soft".. Rub through
■ a sieve. Soften gelatine in cold water
for ten minutes and dissolve in boil-
ing water. Stir into rice mixture (
with salt and sugar. Whe^i cool add ,
cherries. Fold in whipping cream
g and turn into a mold. Ia»t stand on
H fee until t hilled and firm.
