There are tricks to making even
as simple and familiar a dish aa
fresh applesauce if you want to
save time and Fine flavor.
Mrs. A. L. Cummings, 1014
North Parks, finds the fresh home-
made applesauce suits her family*!
ta te best. She selects t> rt -apples
and adds sugar and nutmeg to
their liking for eating with just
plain toast or with vegetables.
Another Breckenridge resident.
Mrs. T. M. <Joodnight, 401 North
McAmis street says, "We like ap-
plesauce with anything, and eat
it for its own flavor at any me-al."
Foods and nutrition specialists
for the Texas Agricultural Exten-
sion Service say if you are mak-
ing large amounts of apple sauce,
here is a suggestion to save time
in peeling: wash, quarter and core
the apples and cook in a covered
pan with a snail! quantity of
water. Put the apples through a
fo.-d press to remove skins easily
and t obtain a smooth sauce. If
red apples are used, the sauce will
have more color. Add a few grains
of salt and enough sugar to sweet-

On the buffet a ship was placed
on a mirror surrounded by cedar
boughs with red and white candles
rn each end Place cards were min-
iating sailors made of marshmal-
lo'-v- and blue crepe paper.
The buffet luncheon included
Salmon croquettes, green beans,

eti while hot.
The specialists say the amount
of water you use depend; on the
juiciness of the apples and how
thick you like your sauce. If you
add too much water and have to
cook the sauce longer, the flavor
may be changed. By having the
pan closely covered, you can use
just a little water and cook «nly
until the apples «re soft. Watch
carefully to keep from scotching
the applesauce.
Another way to make applesauce
is to pare quartered and cored ap-
ple?, cook with a small amount of
water in a covered pan until ten-
der, and then crush the pieces with
a potato masher or stir until
smooth. Add salt and sweeten to
taste.
Early fresh apples usually have
so much flavor of their own that
the sauce needs no extra touches.
But for variety the specialists
suggest brown sugar or h.-ney fr,r
sweetening. Cook the apples with
raisins, a few whole cloves or «*
stick of cinnamon and remove the
cinnamon before you serve the ap-
ple sauce. If apples are mild, cook
with a little lemon juice for tart-
