and simmer for another twenty minutes
or until vegetables are tender. Serve
hot garnished with cilantro. Makes
approximately 12 servings.

and oregano. Add meat-and-spice
mixture to pot. Break up any lumps
with fork and cook, stirring occasionally,

water and salt. Bring to boil, lower heat
and simmer uncovered 2% to 3 hours,
stirring occasionally until meat is tender
and flavors well blended. Add water
as necessary. Taste and adjust season-
ings. Serves 6. NOTE: When using a
commercially blended chili powder in
place of chili pepper, cayenne, oregano
and cumin, use 3% tablespoons chili
powder, increasing to taste if necessary.
