Two cups of cranberries one cup o:
water boil till tender stra n add twe
cups of sugar and boil to a thick syrup
turn into a mould to harden.
BEEP TONCJIE.
Boil till tender and whilo warm re-
mo vo tiie skin; when cold cut into thiu
slices.
CAKKEN SALAD.
The best meat of two chickens dress-
ed line twicn as much minced celery
five hard boiled eggs four tablespoons
of melted butter rubbed with the yolks
and tho whites minced line; mix thor-
oughly with one and a half tctuspooni
of mustard; salt and pepper to taste;
moisten tho whole with chicken brotb
and a littlo vinegar. In absence of cel-
ery use cabbage.
MASIIEl) POTATOES.
reel potatoes and boil drain ano
salt; heat a little cream with a good-
sized piece of butter mash the pota-
toes put in tho hot cream and butter
cream with a fork until foamy; then
press through a sieve with a potatoc
masher letting them fall lightly into a
hot dish.
BOILED ONIONS.
Wash and peel; boil ten minutes
pour oil' tho water; boil a second time
drain; pour in more boiling water; add
salt and boil an hour or longer if not
tender then. Then place in a colander
turn a saucer over thent and pros;
firmly to drive off all tho water; put
tliem into a dish; add butter and pep-
per and serve.
WINTER SQUASH.
Cut tip and takoout tho insido; pare
tho pieces and stew in as littlo watei
as possible; cook an hour; mash and
if water' lot stand on tho lire until
dry stirring to prevent burning; season
with suit pepper and butter.
BEETS.
Clean and wash well and boll till very
tender when cool pool and slice mell
some butter in a stowpan and sprinkle
with salt and pepper add a little butter
and Hour rubbed together and ono pint
of vinegar; simmer twenty minutes
then pour over tho beets.
BOILED RICE.
Boil ono-half cup of rice In water un-
til well-done stir Into it ono egg well-
beaten one-half cup of sugar one cup
of milk; mix all well togothor before
stirring into the rice; pour out in a disb
and grate nutmeg over the top.
SWLET POTATOES.
Choose them as near of a sizo as pos-
sible wash and bako until tender.
PLUM ITDDINO.
Ono pound each of currants raisins
suet chopped fine and brown sugar
one and ono-hclf pounds of grated bread
crumbs ten eggs whites and yolks
beaten separately mix together suet
bread fruit and a little salt and nut-
meg and let stand over night; In the
morning add ono and one-half pints of
milk sugar and eggs; work all togeth-
er put in a floured cloth tio it firmly
allowing room to swoll drop in boiling
water and boil throe and one-half hours.
Serve with sauce.
MINCE PIE.
