ionally for an hour. Add sugar
and rook till thick. Pour into
sterilized Jam and seal.
Vegetable Marrow Jam
Three pounds marrows (weighed
after dicing). 3 lemons pugar 3
ounces ginger root.
The marrows should be not nioro
than half grown. Pare and remdve
eods. Cut In thin slices and. shred.
Weigh. Mnko a sirup of two
pounds sugur nnd 4 oupa water.
When boiling add marrows and 1W
stand two days. Drain off Birup.
Weigh marrow again and allou' 1
pound of sugar to 1 pound of fruit.
Put fruit sugar prated rlnjl and
Juice of lemons and 'ginger bruised

preserving kettle. Bull slowly till
