General Directions
for Canning,
requires careful
attention to e ?ery step iu tbe
process. Use only cleuo, fresh,
sound fruits auld vegetables for
canning. Two (hours from gar
deu to can is'a gdod slogan.
Discard for cooking Those witb
earth cling to tbein must be
washed with special cure because
the soil may contain bacteria
that, are very difficult to remove.
Scald apricots, peaches, and to-
matoes id order to rembve peel
more easily.
A short precookiug of the fruits
aud vegetables shrinks them and
makes it possible to fill tbe jars
hot. No food value is lost if the
hot liquor that has cooked out
is used, iustead of btit water, to
till the jiirs,
The material should be tilled
into the jars as hot as possible
so as to decrease the time requir-
ed for the material in the ceuter
of the cau to reach the tempera-
ture of the oauuer. This is espe-
cially important with thick paa-
ty mixtures, siuce they heat
through very alowl.y. Work
quickly So thatcjAus will uot cool
while waiting add get them into
tbecauner as rapidly as possible.
Partially seal glass jars by ad-
justiug springs halfway or plac-
ing screw tops ou loosely, aud
completely seal tin cans before
placing iu the cauuer.
