simmer, Brown the pieces of chicken in plenty of butter
in an iron cocotte, being equally careful not to burn
them. When brown add 1/4 c. cold water and stir to loosen
all the brown in bottom of that pot, then add the onions,
ham and so forth, with every bit of juice. Cover tightly
and cook slowly until the chicken is very tender, stirring
at intervals so that it doesn't stick at all, Now make a
light brown roux by cooking I Tbsp. flour with I Tbspo
butter slowly on a low fire, stirring constantly until a
golden brown. Now pour off most of the juice from the
chicken and add it gradually to the roux, stirring with
wooden spoon until perfectly smooth, Now put i small
glass of cognac in an enamel saucepan with I good generous
cup of Burgundy and add to it gradually the thickened
gravy. Pour the whole back over the chicken, taste,
rectify the seasoning, cover tightly and simmer very
slowly for at least 20 minutes longer, Before serving,
skim off every bit of fat which will rise to the top when
removed from the fire for a few minutes. Put the pieces
into a hot earthenware casserole and pour over all the
sauce and vegetables and ham, being sure not to include
the bouquet. Serve at once with crisp Frelch bread
and a bottle of Burgundy.

2 - 3 lb. fryers, cut up 1/4 tsp. cloves
2 Tbsp. olive oil 1 bay leaf
3 large onions, sliced 2 Tbsp, vinegar
1/3 c. parsley, chopped 1/2 c, dry sherry
2 Tbsp. sesame seed 4 green chiles, peeled, cut
3/4 tsp. pepper in large pieces (1 can)
salt to taste 20 whole stuffed olives
1 inch stick cinnamon
Place chicken in pan with cover. Saute onions and
parsley in oil for a minute or two. Add all other ingre-
dients, Pour over the chicken, cover tightly. Bake in
350 degree oven for 1 1/2 hours or until tender. Add
more wine or water if it gets too dry. Turn heat very
low the last hour of baking.
