SPINACH BALLS
2 (10 oz. pkg.) frozen spinach
2 c. herb-flavored stuffing mix
1 large onion, finely chopped
6 eggs, well beaten
3/4 c, melted margarine or
butler
1/2 c. grated parmesan cheese
3/4 T. cayenne pepper (or to
taste)
1 1/21 garlic salt
1-2 t. Creole seasoning (any
brand)
PREHEAT oven to 325 de-
grees.
LIGHTLY grease a cookie
sheet
COOK spinach according to
directions on package, then
drain well, squeezing to remove
excess moisture.
COMBINE with stuffing mix,
onion, eggs, butler, cheese, cay-
enne and garlic sale.
MIX well.
SHAPE into 3/4" balls and
place on cookie sheet
BAKE for 15 to 20 minutes.
(These may be successfully fro-
zen before baking by placing a
pan in freezer until hard. STORE
in airtight bags. To serve, thaw
slightly and bake 20 to 25 min-
utes.)
To serve, put a party pack in
each and your guests will enjoy!

duct a breast cancer screening
clinic at Swisher Memorial
Hospital, Thlia, on June 8.
The key to winning the battle
against cancer is early detection
by having an annual breast exam,
mammogram and performing a
breast self-exam each month.
Participants will receive a low-
cost screening mammogram. Each
woman screened will receive a
breast health appraisal and indi-
vidual instruction by a registered
nurse in breast self-examination.
Funding is available through the
Texas Department of Health for
Texas residents who qualify for
assistance. All exams are done by
