Tlus is a great wintertime
brunch dish. Back in the 40s
and 50s we had tlus for Sunday
dinner
Cheese Rarebit
6 oz. beer
8 oz. monterey jack cheese,
grated
8 oz. processed American
cheese, grated
1 T Worcestershire sauce
1/2 stick butter
1/81 cayenne pepper
1/21 baking soda
1 egg. well beaten
Heat beer in top of double
boiler, over boiling water
Stir in cheeses. Worcestershire
sauce, butter, cayenne, soda and
egg-
Heat through, hot enough to
cook the egg.
It's ready
For luncheon, make your
favorite toast or toast English
muffins. Put a piece of toast on
each plate, top with a 1" slice of
juicy fresh tomato. Top with a
generous serving of the rarebit
sauce, and sprinkle with cnsp
bacon that has been crumbled or
bacon bits.

wallet were found at another locauon
in Tulia. The wallet and cash are still

The Senate Committee on Crimi-
nal Justice opened hearings Tuesday,
Jan. 16, into the December escape of
seven inmates from the John B
Connally Jr. Umt in Karnes County
"As policy makers we do have the
authority and the obligation to ensure
that policies that we envision through
statute give TDCJ the tools that they
need," said Victoria Sen Ken
Armbnster, the chair of the commit-
tee. "Sowe’ilbelookmgatitfromthat
standpoint—have we supplied them
with the tools?"
Armbnster called Tuesday's com-
mittee action a preliminary review of
the report on the escape issued Jan
11, by the Texas Department of Cnmi-
nal Justice, but stressed that the
Senate's study of the Texas penal
system is part of an ongoing effort
that began well before the escape.
"You've got 160,000 people in
Texas pnsons spending every wak-
ing minute calculating how to get
out," Sen. Armbnster said. "What we
have to ensure to the citizenry of the
state is that — every waking minute
— we're responsible, that we're try-
ing to spend that time making sure
they stay in "

THE WOMEN'S CENTERof the
Don and Sybil Harrington Cancer
Center and Baptist St. Anthony's
Health System will conduct a breast
cancer screening clinic at Swisher
Memorial Hospital on Feb. 8.
The key to winning the battle
against cancer is early detection by
having an annual breast exam,
mammogram and performing a
breast self-exam each month.
Participants will receive a low-
cost screening mammogram. Each
woman screened will receive a
breast health appraisal and indi-
vidual instruction by a registered
nurse in breast self-examination.
Funding is available through the
Texas Department of Health for
Texas residents who qualify for
assistance. All exams are done by
appointment only. Call 356-1905
or 1-800-377-4673 for more infor-
mation.

THE SWISHER COUNTY Sher-
iffs Department and Tulia Police
Department arc working with the
National Child Safety Council and
National Drug and Safety League,
a federal tax exempt, non-profit,
non-commercial organization, to
prevent drug abuse and child mo-
lestation.
A representative is in the Swisher
County area to explain how this
program works and how we intend
to reach a much larger number of
our youngsters than in the past.
This is the only safety and drug
awareness educational program
that the Swisher County Sheriffs
Departmcnt/Tulia Police Depart-
ment will endorse this year. If you
are contacted by a similar pro-
gram, please notify the sheriff or
chief of police right away. There
will be no telephone solicitation.
