Natural spotlight
Sunshine breaking through a blackened sky became a natural spotlight for these anglers
Redfish Bay Monday, July 22. The dark thunder clouds to the south provided a drama
backdrop for the anglers, starkly outlined by the beam of sunlight breaking through the clouds

Celebrate at Marcel's
A few days ago, I attended the
fourth annual Keep Port Aransas
Beautiful appreciation luncheon at
Marcel’s Restaurant. During the
program, the board of directors, Dale
Bietcndorf, winner of the O.P. Schna-
bel Award, and those folks who con-
tributed to goals were recognized for
their hard work and dedication in
making Port Aransas a beautiful place
to live.
And what could be a more fitting
place to celebrate the wonderful
changes this group has accomplished
in our town, than the beautiful
Marcel’s Restaurant.
My companion and I sat in the
dining room at tables that were cov-
ered with dark blue and white table-
cloths, with fresh flowers in glass
vases. The walls are light cool blue
with dark blue trim and some are
brick giving a nice blend of rustic
with European touches. Everywhere
you look, green plants, tropical bushes
and trees come into view thru win-
dows that feature garden arbors. On
the walls are oils and aery he paintings
of gulf coast scenery by local artist
Azalea Bertels.
In the Deliteria are rattan and wicker
couches that afford a lovely view of
the backyard tropical garden. The
Deliteria opens at 11:30 a.m. and
serves daily lunch specials from $3.95,
and pastrami, turkey, roast beef, ham
and proscuilo sandwiches that are
made from meats baked and roasted
in their kitchen. Their bread and rolls
are made from scratch by owner
Marcel Althauser and baked fresh
daily. They also offer salads and a
> wonderful summer cold shrimp soup
made with buttermilk and cucumbers,
along with several dessert selections.
Our table enjoyed the hot pasta
special that was made with rotini
noodles, ham, broccoli, julienne zuc-
chini, sauteed shallots, cream, garlic,
goat cheese and arrowroot. Also of-
fered were a shrimp salad made with
fresh gulf shrimp, celery, capers and
dressing on a bed of Boston and green
leaf lettuce garnished with tomato
wedges, egg and red pepper ring, and
a beautifully presented assorted sal-
ads platter.
On their evening menu the offer-
ings include the fresh catch of the day,
fried shrimp, sauteed scallops with
basil cream sauce, broiled filet mi-
gnon with green pepper cream,
charbroiled filet mignon with Bear-
naise sauce, charbroiled sirloin steak
with herb butter, grilled chicken breast
with sauteed bell pepper, and a
chopped charbroiled sirloin with red
wine sauce at $8.95. The chefs spe-
cials are breaded wiener schnitzel,
jagerschnitzcl which is a charbroiled
pork loin with mushroom cream sauce
and German goulash. All entrees arc
served with salad, fresh vegetables
and rice or potatoes. A r' dd’s menu
of fried shrimp, fried ' sh filet and
cheeseburgers starts at $3.95.
On the dessert list are assorted
cheesecakes, berries and cream, mud
pie and peach melba.

Appetizers available arc fried oys-
ters with red sauce, u-peel-um shrimp
and crabmeat-stuffed jalapenos.
The talented folks responsible for
these gourmet delights are Marcel,
Heber and Bill in the kitchen.

White Chocolate Macadamia
Ice Cream
2 1/2 c. half and half
8 egg yolks
3/4 c. sugar
1 tsp. vanilla
pinch of salt
10 ounces white imported choco-
late finely chopped
1 c. whipping cream
1 c. toasted and coarsely chopped
macadamia nuts
Scald the half-and-half in a heavy
saucepan over medium heat. Whisk
the yolks, sugar, vanilla and salt in a
bowl. Gradually whisk in hot half and
half. Return the mixture to saucepan
and stir over medium low heat until it
thickens and leaves a path on the back
of a spoon when a finger is drawn
across it. About 10 minutes.
Don’t let it boil. Remove the pan
from the heat and add the chocolate.
Whisk until it is melted and stir in the
cream. Strain through cheesecloth
into a bowl. Cover and refrigerate
until well chilled. Transfer the cus-
tard to an ice cream maker and proc-
ess according to the manufacturer’s
instructions adding the nuts when the
ice cream is almost set. Freeze in a
covered container overnight to let the
flavors marry. This is like a frozen
mousse and makes about 11/2 quarts.
