2 envelopes unflavored gela-
tine
1 cup cold water
1 cup hot water
% cup sugar
1/4 teaspoon salt
1 cup fresh orange Juice
1/4 cup fresh lemon juice
l’A cups sliced fresh straw-
berries
1 cup diced avocado

Mayonnaise
Soften gelatine in cold water.
Add hot water, sugar and salt
and stir to dissolve gelatine.
Blend in orange and lemon juice.
Chill until mixture is about as
thick as fresh egg whites. Fold
in strawberries and avocado.
Pour into a 5-cup mold and chill
until firm and ready to serve.
Unmold on serving plate. Gar-
nish with whole uncapped straw--
berries. Serve with mayonnaise.
YIELD: 6 to 8 servings.

Sauce
3 cups diced fresh rhubarb
2 tablespoons water
1/16 teaspoon salt
3/4 to 1 cup sugar
1 tablespoon fresh lemon
juice
ltt cups sliced fresh straw-
berries
Cook the first 3 ingredients
together in a covered sauce-
pan over low heat, 10 to 15
minutes or until rhubarb is ten-
der. Add sugar. Cool and stir
in lemon juice and strawber-
ries. Serve for breakfast or as
dessert.
YIELD: 6 to 8 servings.
Frosted Fresh Strawberry
Aad Pineapple Cap
1H cups fresh pineapple
wedges
.2 tablespoons sugar
1 tablespoon fresh lemon
juice
6 to • scoops lemon or orange
toe
2 cups sliced fresh strawber-
ries
Combine the first 3 ingred-
ients. Chill 3 to 4 hours or over-
night. PIU sherbert glasses with
alternating layers of the pine-
apple mixture and sliced straw-
berries, having pineapple as the
bottom layer and strawberries
for the top. Top with a scoop
of lemon or orange ice or sher-
bet. Garnish with a whole un-
capped fresh strawberry.
YIELD: f to 8 servings.
Fresh Strawberry Jelly
2^4 quarts fresh strawberries
pectin
2\% ounce package powdered
1/4 teaspoon salt
5 cups sugar
Crush strawberries, put through
a jelly bag and squeeze out
juice. There should be 24 cups
juice. If there is a shortage of
juice, add a little water to the
pulp and squeeze cut again. Mix
powdered pectin with Juice and
bring to a rapid boll. Add salt
and sugar and bull hard 1 min-
ute, stirring constantly. Remove
Cram heat. Skim off foam. Pour
at once into hot sterilised jars,
leaving tt-lnch space at the top
of each. Seal immediately.
YIELD: 6-4 pints.

Alternate layers of slightly
sweetened crushed strawberries
and vanilla ice cream in chilled
parfait glasses. Top each with
