And oh, the colors of spring! The new clean green of spring, the
many colors of flowering trees, peach and plum and pear and apple,
and the brilliant greens of shrubbery and the evergreens in the area.
This is a beautiful, glorious time of the year.
Okay, I guess you can tell I'm ready for warmer temperatures. I'm
NOT a winter person, give me the warmer times any old day.
Edward and Ann Stacy spent some time in Galveston, Houston
area last week. Their time in Galveston was spent visiting with
Mitch and Ina Mitchell. Mitch had had surgery last Tuesday, and
imagine their surprise upon entering his hospital room to find him
sitting up in a chair. They said that he is walking some in his room,
and is recuperating well from his lengthy surgery. Please continue
to keep Mitch in your prayers.
They came back through Houston to visit with some of Ann's
family. They enjoyed their few days away, and everyone here was
glad to hear the good news they brought back with them of Mitch's
recovery.
Mitch and Ina may stay in the area after he is released from the
hospital, to save that longdrive back for his first check-up. They have
family in that part of the state, though, so it is more sensible to stay
close to his doctors for a while.
Albert and Bell Crabb were able to get out for church last Sunday,
with the warmer temperatures. Some of their family, Pat and Elwin
Crow, were visiting with them, and came to church also. It was good
to see all of them.
Jenny Martin's mother was here over the weekend staying with
Cebia and Claire while their parents were out of town. Jay decided
that this would be a good time to come home, too, so he was also in
from Abilene. It was good to see them over the weekend.
Don and Eunice Hufihines were able to come to church Sunday
morning and Sunday eveining. There are many times when they are
encouragement also.
It was announced that Sallie Kennedy was ill last week, but I
didn't get any details. I just know that we.miss her when she isn't
there. I always sit on the row in front of Sallie, so I know when she
isn't there.
The Farr sisters were absent last Sunday also. We always miss
them when they are absent. We pray that they will feel much better
soon, and be back with us.
The last I heard on Janelle Hardwick was that she is some better.
She still was not able to walk, and was undergoing therapy to help
with that. Hang in there, Janelle. You are NOT ready to collect on
that little gift from your nephew yet.
Lisa HufThines had surgery a couple of weeks ago. Please continue
to keep her in your prayers. Her son said she was getting better, but
that she didn't feel good at all on Sunday. Please continue to keep her
in your prayers. We miss this family when they are absent, from
church and the community.
Norma Busby is scheduled for surgery this week. By the time you
read this her surgery should be done, and she will be recuperating.
She is especially ready for the recovery part. She is tired of not feeling
good. Besides, it's awfully hard to hold your granddaughter when
you are hurting. Get well, soon, Norma. We love you and we're
praying for you.
Our Larry came in over the weekend, but we were just a stopover.
He and Melissa went on to Norman, Oklahoma, Saturday morning.
They came back through on Monday, Larry on his way back to
Houston, and Melissa to visit friends in Georgetown. When Melissa
comes home I may have to introduce her to her cat. Crayola thinks
she belongs to us now. Just kidding, Mel.
Our granddaughter, Kristi Shipman, is flying back to Ohio today.
We had hoped to get to see her again before she flew home, but she
was staying with Billy's mother in San Angelo, helping her while she
was recovering from surgery. We did enjoy seeing Kristi and our
little Macy, though, at Daddy's birthday party in February.
Macey is our first great granddaughter, so they are two special
ladies.
We had a scare Sunday night. We were coming home from church,
and had pulled off on the gravel road a half mile from home. And we
could see flames, and the reflection of a house or something next to
it. We were so afraid it was our son's house. As we got closer though,
we could tell it was across the road from his house. But we drove on
thinking that our neighbor's bam was burning, and that he would
need help. But he was right there watching the fire. So it was worry
for nothing, hut a relief, too, knowing that our neighbor had things
under control.
Is this your week for a birthday? If so, Happy Birthday. Those on
my list are Staci West on March 11, Allison Bassler and Krisann
Price on March 12, Lisa Neill on March 13, our Jack Crain on March
14, and Mike Krueger on March 15. Happy Birthday, all of you, and
hope you have many more happy days.
Our hearts are saddened at the passing of an old friend. Walter
Jones left this world for a much better place on Monday afternoon.
His graveside services were on Wednesday. The Church of Christ
goes the first Sunday of each month to the Rest Haven to sing and
worship with those residents who care to come down. Walter was
there, Sunday afternoon, just like always. He never missed an
afternoon when we were there. And he almost always had his Bible
in his lap, wherever he was in the building. Monday afternoon
Walter was called home. We will miss him.
Be careful, wherever you drive during this Spring Break. I've
heard students say they are going to the coast, one said Colorado,
and a lot are staying home. Whatever you do, drive with care. We
want to see you back safely home.

CUSTARD & PUDDINGS ARE BACK
Classic cooked custards and puddings as creme
brulee and flan, and homey desserts as vanilla custard,
bread pudding and rice pudding are again on the dessert
menus at the "best" restaurants. Here are some tips for
making custard and puddings: Temper to avoid curdling eggs by slowly
stirring a small amount of hot liquid into the egg yolks to temper them.
Gradually add the remainder of the hot liquid to the warmed eggs, whisking
continuously. Strain to avoid sauces with lumps by passing the custard
through a sieve, and press down to strain out lumps. Baking in a water bath
prevents custard from overcooking, protecting the egg mixture from cur-
dling, and cracking at the top. To make a water bath, fill a high-sided pan
halfway with water. Set custard cups, souffle dish or pudding dish in the
water bath before baking. Use a double boiler or place the egg mixture in
a pot, over another pot of boiling water to prevent custards made on top of
the stove from scorching.
CARAMEL CREMES BRULEES
. a 2-inch piece of vanilla bean,
1 1/2 cups sugar hfJ,ved lengthwise
3 cups half-and-half 5 whole large eggs
1 cup heavy cream 4 |arge egg yolks
In a deep heavy skillet, cook 3/4 cup of the sugar over high heat, stirring
constantly until melted and deep golden caramel. Remove from heat, and
stir to prevent further darkening. In a saucepan, scald the half-and-half and
cream with the vanilla bean. Into the side of the skillet add the mixture to the
caramel which hardens when liquid is added. Cook caramel mixture over
moderate heat, stirring, until the caramel is dissolved. Remove from heat.
In a bowl, whisk together whole eggs ar|d yolks, add the caramel mixture in
a slow stream, stirring. Strain the mixture through a fine sieve into a large
measuring cup. Pour the caramel mixture into 6 flameproof 1 -cup ramekins
set in a large baking pan, add enough hot water to the pan to reach halfway
up the sides of the ramekins. Bake the custards in the middle of a preheated
325°F. oven for 25 minutes, or until a tester inserted 1 /2-inch from the edge
of one of the ramekins comes out clean. Remove ramekins from the pan, let
cool completely in the ramekins on a rack. Chill them, covered, for at least
4 hours or overnight.
In a heavy skillet, cook remaining 3/4 cup sugar over high heat, stirring
constantly until melted and deep golden caramel. Remove from heat. Let
cool for 5 seconds. Pour caramel quickly over custards. Chill 15 minutes.
