“Small potatoes’’ may be an un-
complimentary term in some quar-
ters, but in the homemaker's world
small new potatoes have a big
reputation for good eating.
These early-crop potatoes are
j " on the market from spring until
fall, so treat the family while
they're available.
Cook them whole In their jack-
ets to get the most food value.
First remove eyes; then scrub the
potatoes with a brush or plastic-
mesh pad.
Most recipes for creamed new
potatoes call for boiling the pota-
toes and then making a cream
sguce. A shorter method is to boil
the potatoes In milk and add sea-
sonings.
Another Idea Is to combine sour
cream and dill seed in a tangy
sauce for new potatoes.
Easy Creamed Potatoes
8 to 10 new potatoes
3/4 cup milk
1/2 teaspoon salt w
1 tablespoon chopped chives
Leave potatoes unpeeled (unless
the_ family objects). Scrub them
-well. Heat milk over simmer flame
until bubbles appear. Add whole
potatoes and stir; cover pan and
cook over full flame until steam-
ing; reduce flame to simmer and
cook until potatoes are tender, or
12 to 15 minutes. Remove from
flame; add salt ‘and chives, stir.
Sprinkle with paprika and chop-
ped parsley and serve. Makes
four servings.
Dill-sauced Potatoes
8 new potatoes, scrubbed
1 cup dairy sour cream
1/2 teaspoon salt
1/2 teaspoo%dill seed
Cook potatoes in boiling salted
water until done. Bolling them
in as little water as possible saves
vitamins. Use about 1 cup of
water and boil potatoes covered
about 12 to 15 minutes. Drain.
Combine sour cream, salt, and dill
seed and pour over potatoes. Re-
turn pan to flame and heat 1 or
2 minutes, turning potatoes to
coat Makes 4 servings.
