PERFECT CHEESE CAKE

Making the shell: Mix with pastry cutter: 1 cup
sifted, enriched, all-purpose flour
V* cup granulated sugar
1 teaspoon grated lemon rind
14 teaspoon vanilla extract
Cut in i/j cup butter; add 1 egg yolk. Shape into
mound; wrap in waxed paper. Chill at least 1 hour.
Pre-heat oven to 400 degrees F. Place *4 dough be-
tween floured pieces of waxed paper. Pat and stretch
with fingers over ungreaged bottom of 9-inch spring
form, removing golden brown (almost 10 minutes). Cool,
leaving on pan bottom as is, increase oven temperature to
500 degrees F. Grease side of spring mold, fit over cook- !
ed base. F'orm remaining dought into thick rectangle. ;
Cut in half lengthwise. Line side of pan. Patting and
stretching it to fit. Patching won’t hurt — but it must
be paper thin and completely cover side.

Mix
played
Beat until fluffy 2Vfc pounds soft cream cheese
together 1% cups sifted, granulated sugar.
3 tablespoons flour
V4 teaspoon salt *
i/2 teaspoon grated orange rind
i/t teaspoon grated lemon rind
^teaspoon vanilla extract
Add Very slowly to cheese mixturer Beat until smooth.
Add one at a time, beating after each addition:
