We are pleased to have Jud>
Fortenhem as our featured cook
this week Judy came to the Lone
Oak area in 1955 from Dell City,
with her parents. Clyde and Ruby
Ross, and her brother John when
her dad was hired as elementary
principal for Lone Oak School Her
mother was a housewife and seam-
stress. Both parents are deceased
Judy met Jimmy Fortenberry
when they moved to the area in
1955. and they were married 35
years on July 9. 1997
The Fortenbenys have a pretty
rural home on the old Fortenberry
homeplace in southern Hunt Coun-
ty just across the Rains County line
The Fortenberry family has lived on
this place since before the Civil
War
Judy has been employed as the
secretary to die superintendent of
the Lone Oak 1SD for twenty-two
years. Jimmy has been with thie city
of Greenville for over thirty years
and is captain of the police force

dren Jennifer Lynn lives in Denison
and is married to Wayne Blunt.
Both teach school in Sherman and
Denison. They have three children
Jill, ape ten: Anna, age nine, and
Katie, age sesen.
Another daughter. Julie, married
Murray Myers, and they have a son.
John Ross, age one They live in
Carrollton She is a homemaker,
anu Murray works at Pritchett &
Associates in Dallas
The third child is a son. James
Fortenberry. Jr . who is a state
trooper stationed in Andrews and is
married to Leah Kay Leah works in
a doctor's office
The Fortenberrys attend Lone
Oak First Baptist Church Judy
teaches third and fourth grade chil-
dren and Jimmy is a deacon
Judy tells me she really doesn't
have any hobbies She likes work-
ing in the yard, and she likes cook-
ing She said she would like cook-
ing much better if someotK would
clean up after her She and Jimmy
like to take short trips to interesting
places in Texas, but they really
enjoy traveling out of state when
time allows. Judy tells me that the
most exciting event in her life was
when she married Jimmy.
Jimmy helps to prepare the meals
and clean up He and the kids have
always helped in the kitchen, and
the granddaughters love to help
now The food Judy likes to prepare
most are main dishes. Mexican food
and simple American food such as
chicken, hamburgers, steak or

Jimmy loves Mexican food, so
she cooks a great deal of Mex'can
food To her advantage, her sister-
in-law is Mexican, and she has
taught her how to make the dishes
he likes so well
Judy is sharing some of these
favonte recipes with us. and I ain
sure you will enjoy trying them.
They sound so good.
Mexican Stew
4 cube steaks
2-3 small to medium potatoes
1 onion
1 small jar picante sauce
Cut steaks and potaioes into small
cubes and chop onion. Cook meal,
potaioes and onions in very small
amount of water in a heavy iron skillet.
Cook, adding small amounts of water
until potatoes are done (steak and
onions will be done before potatoes).
Add picante sauce and simmer anoth-
er 10 minutes. Serve with warm tor-
tillas, refried beans, cheese dip and
Mexican rice.
Spanish Rice
1 /4 cup oil
2 cups uncooked rice
1 small onion, chopped
2 chicken bouillon cubes
4 cups watter
tomato sauce
sail and garlic powder or garlic sail
Fry rice in oil unlit brown. Stir in
remaining ingredients. Cover. Do not
stir Add water a little al a time to fin-
ish softening rice. Never slir. Keep cov-
ered while softening rice
Refried Beans
Leftover cooked pinto beans
Grated cheese
In iron skillet with small amount of
oil or bacon drippings, mash beans
using old-fashioned polalo masher
Jusl before finished, add grated
cheese to taste. Mix cheese in until
melted.
Tacos
2 tbsp margarine
1 large onion, chopped
1 green pepper, chopped
1 dove garlic , minced
2 lbs ground round
1 tsp chili powder (more If preferred)
1/2 tsp tabasco
1/2 tsp salt
1/2 tsp sugar
Melt margarine, brown onion, pep-
per and garlic Cook until lender Add
beef and cook until well browned Stir
in remaining ingredients Cook over
low heat (or 15 minutes Serve with
taco shells, diced tomatoes, diced
onions, chopped lettuce and shredded
cheese

sticky liquid splattered everywhere
with broken glass mixed in She
never got all the splatters cleaned
up

We are so thankful for this cooler
weather. It will soon be tune to
pick cotton, so we can Find a
watermelon on our row, and sit
down on our sack and have a cold
lunch That was the good old days,
although the young people don't
think so. Oh. that was the best
melon you ever had in your life.
Someumes 1 would get on m> sack
of cotton and go to sleep I never
did worry about a snake coming by
We killed a big snake close by this
week, so they are still around.
Tommy and Bobby Thomason had
two grandsons and a friend to visit
with them for a couple of days. It
was Sammy Thomason and Jeff
Fagan from Cleburne. Grandma is
tired, for we are not what we use to
be The boys went fishing while
here. I have kept all of my
grandchildren for a week at a time,
but they are ail grown now
The Alba Country Fair will be
this weekend. Friday and Saturday,
the 26th and 27th of September
There will be a gospel singing
Friday evening at 7 00 p.m. with
different churches doing the
singing. Bright Star choir will be
singing. Audrey Hill will sing
Lloyd and Lois Hopkins will also
do a song.
Mrs. Lucille Davis came into our
church by letter. We missed her
name last week in the paper Ricky
Williams, Lois Hopkins and Sandy
Hargroves celebrated birthdays.

Hudgins. Olga Bingham. J.T.
Gaby. Mandy Rodgers, Joe Stre-
beck, Henry Ramsey and Bobbie
Thomason.
Joe Strebeck has been in the
hospital in Quitman for a week. He
has been pretty sick. Mrs. Genny
Foster is not doing too well. She is
going to see her doctor Monday.
She will go to the hospital if not
better. Odell Hargroves has been
sick for a few days with pneu-
monia. She is doing better today.
Hazel Anderson is home doing
better every day. J.T. Gaby is in the
hospital in Tyler. Grace Reagan is
doing better. Her children are taking
care of her in her home.
Paul and Carol Foster came for a
short visit one day. We sure will
have chicken and gravy soon. Paul
and I visited with Walter and Vonda
Ragsdale Friday night.
Oleta and Cindy Gowin returned
home safely from their trip.
We had good church services
Sunday. Brother Earl brought us
two good messages.
Looks like more good signs of •
rain is on the way today. Sure hope
it makes it so we can plant some
turnip seed, as it has been too dry
for them. The collard plants has had
a hard time surviving the drought
myself. We have got to find some
ribbon-cane syrup to go on the
breakfast table.
Hope all the sick ones on our list
are better and their needs are met.
Stay in prayer.

Several of our ladies enjoyed
breakfast Thursday in Mineola.
They were Audrey Hill, Mae
Miller, Lucy Magee, Loucielle
Martin. Lucile Davis, Oleta Gowin,
Martha Burns, Lynn Bridges and
Erma Moore.
We hope to eat breakfast with the
men this Saturday, Sept. 27th, at
7:00 a m. in the fellowship hall.
It was good to have Carolyn
Thomas visiting our church today.
All other visitors are welcome.
They are a blessing to us. Stay in
prayer for the revival for Bright Star
Baptist Church, Sept. 28th thru
October 2nd, at 7:00 p.m. Brother
Billy Smith is the evangelist,
Lloyd Hopkins will be leading the
singing, Lois Hopkins, the music,
and Brother Earl Kernes, pastor.
Our prayer concerns are for Victor
Slatter, Clarence Davis, Robert
Burns, Grace Reagan, Odell Har-
groves, our country, our pastor,
Brother Earl Kernes, our church, the
busy on every thing we have out
there.
I am waiting on my breakfast to
be served to me this morning. I
think I had better get on the job
