Tomato Reeall
Last week on my way to a
meeting, 1 stopped at a fast-food
restaurant to get coffee. Attached
to the front of the cash register
was a notice stating that fresh
tomatoes were not being served
at that time due to the recent out-
break of Salmonella. 1 was very
appreciative of their decision to
not serve tomatoes, rather than
take the chance that they were

CELEBRATE ANNIVERSARY - Marvin and Judy Hartog observed
their 48th anniversary on June 10, 2008. They were married June
10, 1960. They have five children, 14 grandchildren and two great-
grandchildren.
The Center for Disease Control
is working closely with public
health officials in several states,
including Texas, to investigate
the outbreak of human Salmo-
nella stereotype Saintpaul infec-
tions. They identified the likely
source of the illnesses as the con-
sumption of raw tomatoes. While
they are still investigating the
specific type and source of toma-
toes, preliminary data shows that
large tomatoes, including Roma
and red round are the source.
The Food and Drug Admin-
istration recommends that only
fresh and fresh-cut Roma, red
plum, and round red tomatoes
and food products made from
those tomatoes be eaten. Also,
cherry tomatoes, grape tomatoes,
and tomatoes sold with the vine
still attached from any source
may be consumed.
So it is fairly easy for you
to safely purchase the correct
tomatoes. However^ as' I men-
tioned before, restaurants are a
whole different issue. While the
one I stopped at made the right
decision to not serve tomatoes
at all, other restaurants may not
choose to take that path. So when
ordering food, I strongly suggest
you ask your server to “hold” the
tomatoes that might normally ac-
company your particular dish.
Keep in mind, however, that
tomatoes are often used in fresh
salsa, guacamole, and pico de
gallo, as well as other side dishes.
So basically, use caution when
dining out.
What are the symptoms to
watch for if you suspect you have
been infected with Salmonella?,
Most people develop diarrhea, fe-
ver, and abdominal cramps with-
in 12-72 hours after infection/lt
usually lasts 4-7 days and usually
can be diagnosed by a culture
of a stool sample. Most people
recover without treatment, but
severe infections can occur that
require medical attention because
the Salmonella may spread from
the intestines to the bloodstream
and then to other body sites, and
can cause death. Infants, the el-
derly, and people with impaired
immune systems are more likely
than others to develop severe re-
actions.
Here are a few tips to follow:
• Refrigerate tomatoes with-
in two hours or discard cut,
peeled, or cooked ones.
• Avoid purchasing tomatoes
that appear to be bruised, dam-
aged or spoiled.
*• Wash all tomatoes thoroughly
under running water.
• Keep tomatoes separate from
raw meats, raw seafood, and
.....■ ■ raw produce items.
• Use hot water and soap to
wash cutting boards, dishes,
utensils, and counter tops
when switching between dif-
ferent types of food products.
While this situation can be
serious, being cautious about the
tomatoes you purchase and by
avoiding eating them at restau-
rants, you can keep your family
healthy and safe. For more in-
formation on this topic, you may

com/hottopics/tomatoes.html* or

tension Office at 903/473-5000,
