This week’s featured cook is a
man who has lived in Rains County
for almost twenty years. He and his
family are well known in Rains
County, particularly in athletic cir-
cles. If you have ever been to a high
school football game or to a junior
high volleyball game, you may have
heard Jeff Mayes and his wife
Rexine cheering for their children.
Jeff and Rexine have been mar-
ried for eighteen years, and he
refers to the day they married as the
most exciting event of his life They
have three children that are all ath-
letically inclined and of which they
are very proud.
Their oldest son, Josh Mayes, is
21 and is in the Army. He is cur-
rently stationed in Georgia and will
graduate from college in January
with a degree in communications.
Their other son, Brandon Mayes, is
a senior at Rains High School and is
well known for his athletic ability
on the football field. Their daughter
Britta Mayes is in eighth grade and
is also a talented athlete.
Jeff says his favorite hobbies are
helping the youth of Rains County
with sports. He and Britta even play
for a summer basketball league.
When he is not attending Brandon
or Britta’s sporting events or help-
ing the youth of Rains County with
sports, you can find him and his
family at Emory Baptist Church.
Jeff’s father, Jim Baxter, was a
ranch foreman, so he moved fre-
quently during his childhood. Of all
the people who made an impact on
his life, his grandmother, Vergie
Hayles of Pleasant Grove, taught
him the things he values the most.

worked at E-Systems for about ten
years but eventually went back to

Jeff says the farthest he has ever
traveled was on a business trip to
Horsem, Pennsylvania, but his best
vacation was in South Carolina,
where he watched Josh graduate
from boot camp. Other than his son
Josh, the things he loves most are
right here in Rains County.
He and Rexine met in Cumby
and Jeff described it as love at first
sight. He said as soon as he saw her,
he knew she was the one for him.
Rexine has lived in Rains County
most of her life, she has attended
Emory Baptist since she was about
ten and works at Country Flowers
and Gifts. Jeff says one of the things
,<;he likes about what Rains County
had to offer, besides his wife, was
the friendly people and country liv-
ing.
Indeed, the local community did
pull together to help when tragedy
struck him and his family. Shortly
after Rexine had begun an embroi-
dery business, working out of their
home, and 1 suspect, investing
much in the venture, their home
burned on November 6, 1999. It
was a total loss and now, just a year
later, they are preparing to rebuild,
with the help of those “friendly
Rains County folk” that Jeff has
always appreciated.
In the kitchen Jeff likes to cook
chicken and Mexican food. He
teaches his kids to cook too, and the
whole family has been known to get
involved in a good meal. His
favorite cook is his mother-in-law,
Wanda Nutt. t
When asked what he wants most
in life, he said that his wants were
all in the past, and that like most of
us, he just wants to see his chil-
dren’s goals and dreams realized.
Fried Pies
1 pkg flour tortillas
1 can pie filling
2 Tbs. butter or Crisco
Heat butter or Crisco on stove. Spoon pie
filling into tortillas. Fold over and fry until
brown on both sides. Place on paper tow-
els to drain. Sprinkle with sugar.

Chicken Quesadillas
3 lbs. boneless, skinless chicken
breast
3 large bell peppers, chopped
2 large yellow onions, chopped
1 cup pre-cooked mushrooms
3 Tbs. butter
2 cups grated cheese
2 Tbs. Lawry’s Seasoned Salt
2 cups Italian dressing
1 Tbs. pepper
1 tsp. salt
2 Tbs. oil
1 pkg. of 12 flour tortillas
Mix Italian dressing, Lawry’s Seasoned
Salt, pepper and salt into a large bowl.
Place chicken breasts in bowl and cover
while chopping onions and peppers In a
pan, cook chicken in oil until done
Remove chicken agd dice; set aside. In
pan, saute peppers and onions in butter.
Preheat overt to 350°. Place tortillas flat
on a baking sheet and cover one half of
each tortilla with vegetables and chicken.
Cover with chtjese and fold in half Bake
for 10-12 minutes or until cheese melts
and serve with your favorite sauce. The
choice is yours!
Burrito Casserole
2 lbs. ground beef
1 pkg. burrito seasoning
1 jar Pace picante sauce
1 can refried beans
1 cup grated cheese
1 pkg. flour tortillas
Brown meat, add burrito seasoning. Drain
grease. Add picante sauce, beans and half
of the cheese. Spoon mixture into tortillas,
roll and put in casserole dish. Top with
remaining cheese. Cover and bake at
300° for 20 minutes. Serve with lettuce,
tomato and sour cream.

Fish Fry at
Shady Grove
On Saturday night, November 11,
at 6:00 the Ladies’ Helping Hands
will sponsor a fish fry at Shady
Grove Baptist Church. There is
always lots of good fish as well as
lots of other good food to go with it.
Come out and fellowship with us.
All donations will go toward the
fellowship hall. See you there.

recent visitor in the office to renew

mystery dinner
The “Deluxe Cafe” will present
two separate performances of The
Mild, Mild West on November 17
and again on December 1 at 7:00
p.m. each night. The show will be
held at the Emory United Methodist
Church.
Sweet Sue Sobright and Tex
Toogood try to prevent the evil vil-
lain, Snively Snidely, from taking
over the Bar-BO Dude Ranch. You
can bet there’ll be some kind of a
crime - probably a murder - before
all is said and done!
Come eat, drink, be entertained,
and compete in order to solve the
mystery before Detective Ketchum
does. Seats will be limited to each
performance and are $15 each again
this year. Tables seat seven only and
can be reserved for groups.

Melba Childers was a visitor in
the office recently to renew a sub-
scription of the Rains County
Leader for her daughter, Marianne
Goode.
TOPS TX 1244 met in regular
session on October 31. Our meeting
was called to order by our leader,
Jan Burns. The devotional was
given by Lori Wilson entitled
“Autumn’s Appeal.”
We all said the TOPS pledge and
sang the TOPS song.
Linda Franklin called roll with
eight weighing in with 9.5 lbs. lost.
The money can was won by
Mildred Broiles.
Lori Wilson read the minutes. We
have a new member, Mary Ripple.
Joan Lomax won the contest.
We had a no-gain night. Vickie
White will be our TOPS Contest
Chairman. Jan Bums gave a short
program entitled “Taking Care of
Your TOPSmobile.”
We have moved our weekly
meetings to the Emory Baptist
Church. We will be meeting in the
fellowship hall from 6:00 to 8:00
p.m. on Tuesday nights.
We had some ladies absent. We
hope to see them back soon.
We closed with our Helping
Hands pledge and the Goodnight
song.
