Even though Pam Cole is new to
Rains County, she is not unfamiliar
with small towns. She and her hus-
band Randy moved three and a half
years ago from Lyons, near College
Station She grew up in Kerens,
close to Corsicana and Athens,
which was as small, if not smaller,
than Emory.
When they moved to Rains
County to be closer to his mother
Sherry and grandmother Mauretta
Gray, Pam took a position at the
Rains School leaching English as a
Second Language for pre-kinder-
garten through 12th grade Her
degree is in special education from
East Texas State University in
Commerce where she and Randy,
also a teacher at Rains, graduated in
I ‘>94. Pam said she also worked
part-time for a flower shop in
Kerens during vacations and holi-
day breaks while attending college
Her parents, Bazel and Mona
Strange, m very important to her
and have helped her make good
decisions in life. Her dad liked to
tease her saying, "Don’t go off and
find a guy while at college " Too
late The couple had already met at
ETSU in Commerce in the fall of
1992 where they were paired up to
play in a tennis and badminton P.E.
class Her father joking told her that
he wouldn’t pay for school if she
married before she graduated. “So
that’s why we waited until four
weeks after graduation to get mar-
ried, “ she said with a smile.
Randy and Pam honeymooned to
their favorite place, the Grand
Canyon and spent a whole week.
Most of the time they stayed in
hotels but they also camped out
under the stars in national parks in
both the canyon and Arizona on the
way there. They also took time to
see the Petrified Forest and the
Meteor Crater.
Pam and Randy enjoy playing
tennis, reading, watching movies,
and going out to eat, "So I don’t
have to clean up after dinner.”
They also take their daughters to
tlje park or zoo. and anything else
the littlest one can do, like the
movie theater in Commerce, be-
cause it’s cheap and they liked
going there when they were college
students. The last movie they went
to see was Tarzan but their youngest
daughter Corley Summer, almost 2,
was a little nervous about the open-
ing scene, but Briley Canyon, 3-1/2,
thoughly enjoyed it.
At night, after a day with their
sitter, Laura Oualline, filled with
Barbies, Barney and Winnie the
Pooh the girls especially enjoy their
bedtime stories.
They live in a nice brick house on
Wells Street with a backyard big
enough to play baseball in. Randy
likes to play all kinds of sports but
Briley is best at baseball. “She can
hit good,” Randy said. “I think she
just likes to hit it over the fence so
lhat I have to lift her up over it to go
get the ball.” Their backyard is also
home to three dogs named Beauty,
Poombah and Mowgli.
Because Pam and Randy are
teachers, they have plenty of holi-
day time to spend together during
the summers and winters It allows
them to take their daughters on lots
of family vacations to visit his
father and stepmother, Johnny and
Kathleen Cole in Sour Lake near
Beaumont. They spent a week in
July last year with his dad and
Kathleen in their beach cottage in
Pensacola, Florida
They have also been to Vermont
where they stayed a week and a half
with her grandfather. Edward
Conant. On their way there they
went to Savannah, Georgia and
Myrtle Beach. North Carolina
Corley didn’t like swimming in the
ocean as much as Briley so she
made lots of big sand castles on the
beach. On the way back they
stopped at Niagara Falls on the
Canadian side
- While they travel they like to
iiearch for antique trunks. They
have one that they found in Maine,
one they received from her grand-
lather. and another favorite her aunt
gave them
- Despite all of the great family
vacations she would one day like to
take a long cruise to the Caribbean
or to Cancun, just her and Randy
Many times you can find them
visiting her parents who are just a
short hour away. When they
returned from visiting relatives dur-
ing Christmas vacation Pam
reported that the girls thoroughly
enjoyed six gift exchanges.
A week before Christmas, on his
birthday, Pam, assisted by her two
daughters, made Randy a birthday
cake. Pam really likes spending
time with her girls and husband in
the kitchen because it opens up into
their living room making it an
essential part of their lives.
“When Randy grills, its great,”
she said, "because like everyone
knows, it makes less of a mess to
clean up in the kitchen.”
Pam said that their daughters like
to eat everything - from potatoes,
beans, veggies and meats - they eat
real well. They also try to help with
making things like Kool-Aid, birth-
day cakes and putting the groceries
away.
Pam says she likes to fix her fam-
ily’s favorites which include several
crock pot recipes and things that are
easy and fast. “But," Pam said,
“when I have more time, I like to
make more elaborate meals."
Enjoy her recipes.
Chicken Spaghetti
1 whole chicken, boiled, deboned
and set aside
1 lb spaghetti
1 sm. onion chopped
2 cans cream of mushroom soup
1 can cream of celery soup
1 can chopped black olives
2 cups shredded cheese
Cook spaghetti and onion in chicken
broth Cut chicken into bite sized pieces
while spaghetti is cooking Put 1/2
spaghetti in a 9x12 inch, well-buttered
pan Cover with I can of mushroom soup,
half of the chicken, olives and cheese
Repeat for second layer Spread cream of
celery soup around the outer edge of pan
Cook at 375* for 30 minutes or until bub-
bly
Pure Vermont Dirt Cake
1 Ig. pkg Oreo cookies
(not double stuffed), mashed
1 8 oz pkg cream cheese
1/2 stick butter
1 cup confectioners sugar
3-1/2 cup milk
2 pkgs instant vanilla pudding
(small)
I 12 oz Cool Whip
1 8" flower pot or pail, shovel
In large bowl, mix cream cheese, butter
and confections sugar Mix well Add milk,
pudding and cool whip Mix well In flower
pot. put wax paper or plastic lid on bot-
tom Layer oreos, then pudding, keep
alternating and end with cookie mixture
Once Pam made meatballs with rice in
them When they came out done they
looked like hairy Chia pets and Randy
wouldn’t touch them She ate one and the
rice was still crunchy
She also admits that she won't make
too many things with a meringue She will
use whipped topping instead because she
has wasted so many eggs in the past trying
to make the meringue stiff and fluffy
Emory Lions
Club news
The" Lions of Emory are begin-
ning the year 2000 with renewed
effort on fundraising and benevo-
lent opportunities.
At our December 21st meeting
we approved the purchase of eye-
glasses for a needy student at Rains
School.
District Governor Lion Van
Hawes gave a speech on the four
ships: leadership, membership, fel-
lowship and partnership.
Lion Bill Gleason won the gift
certificate donated by In the Garden
Tea Room.
At our January 4th meeting Rains
School Superintendent David Sea-
go gave a presentation entitled “The
Future of Educating Children Be-
yond 2002. He also presented plans
of the future high school.
Plans for a pancake breakfast at
Eagle Fest were discussed. Also
discussed were plans for future
fundraising events.
The next meeting will be January
18th at the Rose Community Center
at 12:00 noon. Visitors are always
welcome.

Put plastic flower in pot or pail. Add
shovel. Freeze overnight. Don’t forget to
use shovel when serving! It's best to let it
set at room temp a little while before serv-
ing.
Easy Ijisagna
pkg uncooked lasagna noodles
lb Hamburger meat, browned
and drained
jar Ragu Thick and Hearty
or Chunky Mushroom
jar of water
oz mozzarella cheese
3 oz. cottage cheese
Mix browned meat, spaghetti sauce,
water, 1/2 of the cheese and cottage
cheese in a large bowl Pour 1/3 of the
mixture in a large glass baking dish Layer
uncooked noodles Repeat with mixture
and noodles and mozzarella cheese over
top and cover with foil Bake at 350“ for 45
minutes with foil Remove foil and bake
addition 15 minutes Let stand a few min-
utes before serving.
“The Pink Salad”
Jell-O Salad
18 oz. carton cottage cheese,
small curd
1 pkg. strawberry or raspberry Jell-0
1 large can of fruit cocktail, drained
Stir Jell-0 into cottage cheese until all
Jell-0 is dissolved. Stir in Cool Whip and
fruit cocktail Chill o...might or several
hours until time to serve. (Can substitute
orange Jell-0 and 1 can of mandarin
oranges instead of fruit cocktail.)

Sunday night Mike and Donna
Wilson and their daughter (whose
name didn’t change with marriage)
and son-in-law presented talks and
information on their upcoming mis-
sionary work in Brazil. 'The Wilsons
will soon leave for the Amazon in
Brazil as Southern Baptist mission-
aries.
Many in the community are ill,
and many are just enjoying after-
Christmas and New Year’s celebra-
tions with rest and other non-news-
worthy activities. Maybe I’ll have
more news reported next week.

nounced its President’s Honor Roll
and Deans’ List for the 1999 Fall

To be eligible for the F*resident’s
Honor Roll, a student must earn a
straight A or 4.00 grade-point aver-

Deans’ List students must post a
minimum of a 3.25 grade-point

Emory chapter

TOPS #1244 met in regular ses-
sion January 4. The meeting was
called to order by Margaret
Mierzwik. Our devotional, “Scarlet
Slippers,” was brought by Linda
Franklin. We all said the TOPS
pledge and sang the TOPS song.
Our KOPS members said the KOPS
pledge.
Linda Franklin called the roll
with 15 weighing in. We missed
Peggy Butler and Jessie Miller. We
had a loss of 14.75 pounds. We wel-
comed one visitor, Linda Morrow.
Lori Wilson was TOPS best loser
for the week and Bonnie Mays was
KOPS best loser.
Johnnie Dry gave us a treasurer’s
report. Connie Dunbar read the
minutes of the last meeting, and
they were approved as read. Bonnie
Mays won the SRD prize. Elizabeth
Hutchins celebrated a birthday.
The club raised money playing
bingo. We all had a wonderful time.
We closed with the Goodnight
Song and the Helping Hands
Pledge.
