This week’s featured cook is
Tammi Fritz. She and her husband
David love children, and 1 would be
willing to bet that they are very
patient, loving people, since they
recently took on the added respon-
sibility of three foster children
besides two children of their own,
Ryan, age 12, and Ethan, age 10.
I'he foster children are ages two,
three, and four. She has been home-
schooling her children for about six
years.
Tammi says she likes living in the
country and that she enjoys the
quiet, small-town atmosphere of
Rains County (though it may not be
so quiet at her house). Tammi and
David have been married for four-
teen years. They grew up together
here in Rains County. Tammi is a
homemaker and David builds cabi-
nets. They attend New Covenant
Fellowship in Emory where she
sometimes teaches the children’s
class.
When she is not chasing kids,
taking them ail somewhere, or giv-
ing them lessons, Tammi likes to
read and sew. but says she hasn’t
had time for either lately. For enter-
tainment, she likes to have friends
over to play games while the chil-
dren entertain themselves with vari-
ous games including play-
wrestling. They also have two dogs
named Cody and Buck that the chil-
dren especially enjoy having
around. Tammi says her most en-
joyable vacation was camping with
friends.
Tammi is the daughter of Tony
and Janie Clawson and grew up
with three sisters and one brother,
who are all married and also have
children of their own. Her parents
have been the most positive influ-
ence in her life; words could never
express how much she truly appre-
ciates them, she stated. Her mother
is ajso her favorite cook.

like they are a real team, but it does-

l/4 lb. margarine, melted
l-l/2 cups graham cracker crumbs
l/2 tsp. cinnamon
l/2 tsp. nutmeg
l cup coconut
l 12-oz. package chocolate chips
l cup pecans
l can condensed milk
Combine margarine, graham cracker
crumbs, cinnamon and nutmeg. Pat down
into a baking dish to make crust. Layer
coconut, chocolate chips and pecans.
Pour condensed milk on top. Bake at
350° for .30 minutes.
Chicken Pot Pie
2 chicken breasts, cubed
2 cans Veg-All, drained
2 cans cream of chicken soup
l cup cheese, grated
I cup milk
l cup flour
l stick butter, melted
Combine first three ingredients in large
baking dish; sprinkle with cheese. In a
large bowl, combine milk, flour and but-
ter. Mix well and spoon over first mixture.
Bake uncovered at 375 ° for 45 minutes to
an hour

Easy Cream Cheese Fruit
Squares-
1 cup sugar, divided
1/3 cup butter or margarine
1-1/2 cups graham cracker crumbs
3 8-oz. packages cream cheese
4 eggs
1 tsp. vanilla extract
1 12-oz. can blueberry filling or top-
ping
Preheat oven to 325 . To prepare crust: In
a medium saucepan place sugar and but-
ter; heat until butter is melted, stirring
occasionally. Stir in graham cracker
crumbs; press mixture evenly over the
bottom of a baking pan. In a large bowl
with an electric mixer beat cream cheese
until smooth. Gradually beat in remaining
sugar. Beat in eggs, one at a time, and
vanilla, until well blended. Spoon blue-
berry filling evenly over crust. Pour mix-
ture over blueberries. Bake just until set,
45 to 50 minutes. Cool. Chill for two
hours or more. Cut into 24 squares. Serve
garnished with strawberry halves or mint
leaves, if desired.
John's Pudding Cake
lb. margarine
cup flour
cup pecans, chopped
8- oz. package cream cheese
cup powdered sugar
9- oz. carton Cool Whip, divided
4-1/2-oz. package instant chocolate
pudding
1 4-1/2-oz. package instant vanilla
pudding
2 cups cold milk
Combine margarine, flour and pecans for
crust and press into baking dish. Bake at
350° for 20 minutes. Cool completely.
For filling: Blend cream cheese, sugar and
1 cup Cool Whip. Spread over cool crust.
Blend instant pudding mixes with milk
until thick. Pour over cream cheese filling.
Top with remaining Cool Whip. Chill until
serving time.
Whole Wheat Bread
1/3 cup oil
1/3 cup honey
2-1/2 cups warm water
2 Tbs. instant yeast
1 Tb. dough enhancer
2 tsps salt
6 cups whole wheat flour
In a large mixing bowl, combine first six
ingredients with only 2 cups of the flour.
Add remaining flour a little at a time until
dough is stiff and cleans the side of the
mixing bowl. Knead by hand for 7-10 min-
utes or until dough is very smooth and
elastic and small bubbles or blisters
appear beneath surface of the dough.
Form dough into two loaves. Allow them to
rise in a warm place until they double in
size. Bake for 25-30 minutes at 350*.
Bread is cooked done if it sounds hollow
when tapped on bottom This recipe also
makes good cinnamon rolls.
When boiling com on the cob,
add a pinch of sugar to help bring
out the corn’s natural sweetness.

A church-wide Thanksgiving din-
ner was enjoyed Sunday, November
19, following the morning worship
at Enon Baptist Church.
Sunday night the community-
wide Thanksgiving service was
held at Enon with area churches
participating.
Special recognition of Alba-
Golden Caring and Sharing officers
was observed and a memorial
plaque presented to Martha Smith
in honor of her husband, the late
Wally Smith, founder of Alba-
Golden Caring and Sharing.
Berenece Galyean had her family
Thanksgiving dinner at her home
on Saturday the 18th.
The college and career class of
Enon will meet Wednesday at the
home of Jon and Jan Feil to prepare
Thanksgiving dinner for some in
the community. They will deliver
the food on Wednesday night, and
all the food is by donation.
Pete and Pat Wright were in Tyler
Saturday night for a belated birth-
day celebration for Mrs. Wright.
The family enjoyed eating out and
then went back to son Tom and
Beth Wright’s home for birthday
cake and coffee. Present with the
Wrights were Ronny and Wanda
Gaby, Preston and a friend from
Hillsboro, Randy and Ann, Tom and
Beth, Tracy and Rhonda, Jamie *
Gaby arid Amanda Burke. All had a
good time.

Flats & Area News

Greetings from Flats community.
I hope you all are anticipating a
wonderful Thanksgiving holiday
with family and friends.
Paul and I were camping last
week with our Good Sam Camping
Club out of Tyler. We always have a
great time with them. There are 18
or 19 rigs. Other former Rains
County campers in it are Brevard
and Sue Cheek, Harold and Peggy
Larison and Edgewood friends,
James and Durene Sims, and some
of the nicest people from the Tyler
area. It is a wonderful group of
Christian folks. We were at
Whispering Pines at Red Springs.
We had a good crowd at church
this Sunday. We had our church
Thanksgiving dinner after services.
Pactor Akin’s sister, Jewel Aaron,
and son from Georgia are here to
spend Thanksgiving with her fam-
ily. She is also a sister to Murrell
Drake and daughter of Elbert Akin.
They are expecting a lot more of
their relatives here for the holiday.
Our rummage sale for the com-
munity center was very successful.
We appreciate everyone who helped
us out. We will be doing some
repairs on the Flats Community
Center with the money.
If you would like to join us for
potluck supper and game night on
the third Thursday of every month,
everyone is welcome.
Carl and Christene Hall’s son
from Richardson was in church
with them Sunday. He and Carl
sang a beautiful song for us.
We have so much sickness in our
area: colds, flu or something in
between. Anyway, it really hangs
on.
Brandon Forbes was beaming
because Lone Oak won their play-
off game Friday night. I don’t know
where they go next.
Kelli Rabe from Greenville spent
Saturday night with Paula and
Becky Cason. After church Sunday
they went to the movie in
Greenville.
I am beginning to get excited
about mine and Paul’s Christmas
cruise coming up real soon, all
compliments of Thousand Trails.
We will spend some time in Or-
lando, Fla. before going aboard
Carnival’s “Fantasy.” They even got
us ocean-view rooms. Can’t beat
that, along with airline tickets, too.
Sis. Swain was not able to be in
church this week. She doesn’t miss
very often. Shame on us younger
ones. She is 98 and attends more
regularly than a lot of the younger
members.
