ing trick is the use of meat tend-

er.
Flank steak is an economical,
no-bone meat buy. Catsup and
soy sauce give the gravy a deli-
cious, extra pleasing flavor.

INGREDIENTS
1 flank steak <1»4 to 1M.-J
pounds;
■. teaspoon non - seasoned
meat tendenzer
3 tablespoons cooking fat
3 tablespoons all - purpose1
flour
2 cups water
l$ teaspoon black pepper
*-• cup catsup j
2 to three tablespoons soy!
sauce
1 cup sliced onions
l1* cups uncooked white rice1
1 ■: teaspoons salt
3 cups water
1 green pepper sliced into
thin rings
1 3 ounce can sliced mush-
rooms and juice
METHOD: Sprinkle the flank
steak on all sides with the meat
tendenzer. Pierce the meat with
a sharp fork at frequent inter-
vals—to help the penetration of
the tenderizer.
Let the steak stand at room j
temperature for 30 to 40 min-1
utes. Melt the cooking fat in a I
large skillet. Add the steak and
brown well on all sides. Push I
the steak to one side of t h e
j skillet. Blend the flour into the ]
i remaining fat. Cook, stirring, j
j several minutes. Gradually stir
i the water into the flour mixture. I
Stir in the black pepper, catsup
and soy sauce. Add the onions,
i Bring to a boil. Turn heat down.
Cover and simmer 15 to 20 min-
utes or until the meat is tender. I
W'hile the steak cooks, put the
rice, salt and water into a 2-j
quart saucepan. Bring to a vigo-1
rous boil. Turn the heat as low
as possible. Cover with a 1 i d.j
Leave over this low heat 14 min-1
utes. Turn the heat off — but,
leave the lid on until ready to
serve, or at letast 10 minutes.
After the meat cooks until
tender, add the green pepper
and mushrooms. Cover and cook
10 to 15 minutes longer or until
the peppers are tender but still
slightly crisp.
Place the rice on a hot platter.
Arrange the steak over the rice. I
Pour some of the gravy over the
rice. Serve the rest in a separate
dish This makes 6 servings.

and Safety. Texas was also a-
warded a bronze plaque f o r
