Lazy Daisy Cake was a new recipe
to me, but certainly not to many of you
readers who told me that you had been
using it for more than 40 years! Wow!
That tells you right there it's a good
one, doesn't it? Most of us wouldn't
keep a recipe that long if we didn't like
it a lot
There are several ways to fix lazy
Daisies-some folks make large
cakes, some small, and some make
layers. All the recipes have been
passed along to the reader who was
looking'for the recipe, and we both
thank each of you who shared. It's
much appreciated.
Here’s one recipe from Margaret
Haegelin of Hondo who says it is an
old, old recipe which she has used and
enjoyed for many years.
LAZY DAISY CAKE
Beat four whole eggs until thick.
Add 11/2 cups sugar slowly, beat-
ing in well.
Sift 2 cups flour with 2 tsp. baking
powder. Add slowly to egg mixture.
Heat 1 cup milk and 2 tbsp. butter to
boiling point. Add to batter.
Add 1 tsp. vanilla.
Bake in greased 9x13-inch pan or
sheet pan at 350 degrees for about 40
minutes.
While cake is still hot, spread with
the following:
