For Memorable Delicacy

Spain has many sheep. Also, it cooks use native oil in most
dishes. They produce flavor combinations, su' h ns lamb in the Gali-
cian way.
How does this strike your fancy? The combination of olive oil.
tomatoes, spicy sausages, thyme, bay leaf, red wine and lamb plus
little cabbage balls?
Lamb in Galician Style-(Make. 6-8 serving*)
One-quarter cup Spanish olive oil, 1 (about (j pounds) lamb
shoulder, cut in cubes, 1 pound lipe tomatoes, peeled and sliced,
1-2 pound spicy sausage, 1-4 teaspoon thyme, 1 bay leaf, 1 teaspoon
salt, I cup red wine or clear consomme, 1 cup water, 1 tablespoon
wine vinegar, 4 cups finely chopped ■cabbage, 1 cup boiling salted
water, 1-2 cup flour, 1 cup Spanish olive oil.
Heat 1-4 clip olive oil in large kettle. Removeras much fat as
possible front the lamb and brown in hot olive oil. Drain off fat.
Add tomatoes, sausage cut in 1-4 inch slices, thyme, bay leaf, salt,
wine or consomme, 1 cup water and wine vinegar. Cover tightly
and simmer, 1 1-2 hours or until tender.
While the lamb is cooking, make the cabbage balls. Add cabbage
to boiling salted water and simmer 2 minutes. Drain well. Cool.
Squeeze a handful' of cabbage at a time, removing all the water pos-
sible, then shape into 1-incli halls. Roll in flour and fry in 1 cup
hot olive oil until golden .brown. • Drain on paper towels. (This
makes If! to 18 balls). Add cabbage balls to-lamb mixture during
the last 10 minutes of cooking.
