I sampled the peaches at the
farmers market. After I brought
them home, I started googling
for peach recipes. Then ... I

perfection. I simply peeled and
sliced them. I added a little Fruit-
Fresh (R) Produce Protector
according to the directions on
the container to keep them from
browning. Mixing in a small
amount of citrus juice (lemon
juice, orange juice, etc.) would
also help prevent browning.
Caring for Fresh Peaches
For the perfect peach:
• Avoid buying green,
brownish, or wrinkled peaches,
or peaches that are very soft, or
with large bruises or signs of
decay. Hard, green peaches will
never ripen properly.
• Handle peaches gently to
prevent bruising.
• Determine if a peach is ripe
by checking if it is firm but
yields to gentle pressure and has
a strong, sweet smell. A reddish
“bloom” on the peach isn’t a
sure sign the peach is ripe. Look
for a deep yellow or creamy
white under color.
• Store peaches in a single layer
at room temperature, out of
sunlight.
• Ripen peaches by putting
them in a loosely closed paper
bag at room temperature. Check
daily. They should ripen in one
to three days. Do NOT use
plastic bags to ripen peaches.
• Store ripe peaches in the
refrigerator up to one week in a
perforated plastic bag to prevent
water from condensing on the
inside of the bag and causing
storage rot. To make your own
perforated bags you can make
holes using a standard paper
punch or a sharp object such as
a pen, pencil, or knife, punching
holes approximately every 6
inches through both sides of the
bag. If using a knife to create
the openings, make two cuts in
an ‘X’ shape for each hole to
ensure good air circulation.
• Wash peaches just before
eating or cutting them. Washing
peaches before storing may
promote bacterial growth
and speed up spoilage. Wash
peaches under running water,
rubbing the peach gently
with your hands. Do not use
detergent as this may affect

Randison Eli Kunkel and Cassandra Aileen Brooks

Randy Kunkel of Comanche, and Joyce and Brad Brooks
of Magnolia. Randison is a 2007 graduate of Comanche
High School, and a 2012 graduate of Tarleton State
University with a Bachelor of Science degree in Animal
Production. He is employed with Trican Well Service of
Houston. Randison is the grandson of Mary Schwartz of
Early and the late Clarence Schwartz, and the late Zona
and Paul Kunkel of Priddy. Cassie is a 2006 graduate
of Brighton High School in Brighton, Colorado. She
received a Bachelor of Science degree in Agricultural
Services and Development in 2011 and a Masters degree
in Agricultural and Consumer Resources in 2012 from
Tarleton State University. Cassie is the granddaughter of
Marie Chamney and the late Hank Chamney of Calgary,
Alberta, Canada, and the late Rose and Levi Brooks of
Red Deer, Alberta, Canada. Cassie and Randison will
exchange wedding vows on Saturday, November 2,
2013 at Crystal Springs in Magnolia, Texas.

• Quickly skin several peaches
by dipping a few peaches at a
time in boiling water for 30 to
60 seconds. Plunge into cold
water and slip off the skins.
Use immediately or toss with
citrus juice or use a commercial
ascorbic acid mixture, such
as Fruit-Fresh (R) Produce
Protector. Place in a covered
bowl in the refrigerator and use
that day.
Peach Cobbler
Recipe courtesy Paula Deen
4 cups peeled, sliced peaches
2 cups sugar, divided
1/2 cup water
8 tablespoons butter
11/2 cups self-rising flour
11/2 cups milk
Ground cinnamon, optional
Preheat oven to 350 degrees
F. Combine the peaches, 1 cup
sugar, and water in a saucepan
and mix well. Bring to a boil
and simmer for 10 minutes.
Remove from the heat.
Put the butter in a 3-quart
baking dish and place in oven to
melt.
Mix remaining 1 cup sugar,
flour, and milk slowly to prevent
clumping. Pour mixture over
melted butter. Do not stir. Spoon
fruit on top, gently pouring in
syrup. Sprinkle top with ground
cinnamon, if using. Batter will
rise to top during baking. Bake
for 30 to 45 minutes.
To serve, scoop onto a plate
and serve with your choice of
whipped cream or vanilla ice
cream.

Representative Sheffield to
open Stephenville office
State Representative J.D.
Sheffield announced that his
district office will be located
in Stephenville. “I have made
community outreach an
important part of my time as your
State Representative and this
office will bolster these efforts”
said Sheffield. “Stephenville is
the second largest community
in House District 59 and this
location allows my staff and I
to meet with folks from Erath
and surrounding counties in a
central location.”
The office will be located
in suite 402 on the fourth floor
of the InterBank Building
(formerly the Town and
Country Building) at 105 North
Harbin Drive. The lease on
the office begins next week on
August 1st, with State of Texas
property employees needing
a couple of weeks to wire and
furnish the space. The Texas
Department of Transportation
will be installing highway
signage on West Washington
Street to assist visitors. “The
people at InterBank have been
most accommodating as we
began this process about two
months ago,” said Sheffield.
“I appreciate their help.” This
fall, Sheffield intends to hold
a community ribbon cutting to
mark the opening.
Staffed hours have not
been announced but Sheffield
plans to offer internship
opportunities to Tarleton State
University students that are
studying political science or
other relevant courses of study.
“We are very excited to be able
to offer an opportunity to gain
some practical experience in
state government to Tarleton
Students” said Sheffield’s Chief
of Staff Andrew Johnson. “A
benefit of having the office just
across the street from Tarleton
State is that students can fulfill
an internship without the burden
of relocating to Austin.”

Although we have had
some substantial rain,
lake levels continue to
be low. Therefore, we
are still in Stage 1 water
shortage conditions. Please
keep in mind some of the
following tips for conserving
water:
• Limit watering your yard
to three times a week and
only during the hours before
11:00 am and after 6:00 pm
• Refrain from washing
vehicles at home except
between 7:00 am to 10:00 am
and 5:00 pm to 8:00 pm
• Refrain from the use of
water to fill pools or fountains
The following uses of
water are deemed non-
essential and should also be
refrained from:
• Washing down driveways,
sidewalks, parking lots, and
tennis courts;
• Flushing gutters;
• Use of water for dust
control.
Please refer to the
following “zones” for weekly
watering:
Zone 1 - Bounded by Hwy
377 to the south, bounded by
Hwy 16 N to the west, and
bounded by E. Highland to
the north. Watering days
Monday, Wednesday, and
Friday
Zone 2 - Bounded by
Wrights Avenue to the north,

Crock Pot Cake
What You Need
- foutet
Directions
1 box chocolate cake
mix
4 large eggs
3/4 c oil
1 c water
1 pintt sour cream
1 small box instant
chocolate pudding
12 oz semi-sweet
chocolate chips
’ Mix first 6 items until almost
mixed. (I set my mixer to low.)
’ Then add chocolate chips. Mix in
by hand.
’ Spray a large crock pot with non-
stick spray. If your crock pot runs
a little hot, line it with heavy duty
aluminum foil.
’ Cook on low 4 to 5 hours. (Do
not open up the lid!)
’ Serve with vanilla ice cream and
drizzle with chocolate syrup.
