Recipe Modification Ideas!
If you are hosting a
gathering this holiday season
you can reduce fat and
calories without sacrificing
taste by swapping out a few
ingredients in your favorite
recipes.
• Using two egg whites in
place of one egg can reduce
the cholesterol.
• Use low-sodium, fat-free
chicken broth in your mashed
potatoes to add flavor and
cut back on added butter or
margarine.
• Substitute applesauce for
oil, margarine or butter in
muffins and quick breads like
banana bread. Try substituting
a small amount at first, as the
more you substitute the more
the texture of the finished
product changes.
• For dips, sauces and pie
toppings, use fat-free yogurt,
sour cream and whipped
topping.
• Sliced almonds make a
delicious, crunchy topping in
place of fried onion rings.
• Choose reduced-fat or low-
fat cheeses for salads and
casseroles

on socializing, making new
acquaintances, and having
fun. Spend time with relatives
or catching up with old
friends. Think about what you
are celebrating, not just about
the food. Schedule time for
physical activity this holiday
season and aim for 30 minutes
on most days.

1-1/2 cups flour
In a mixing bowl stir
together pumpkin, brown
sugar, eggs and oil until well
mixed. In another bowl,
combine flour, oats cinnamon,
baking powder and baking
soda. Combine flour mixture
with pumpkin mixture and
mix well. Pour into greased
9x13 inch pan. Bake at 350
degrees F for 30 minutes.
Makes 48 squares.

December 13th at the Blue
Moon Cafe in DeLeon.
4-H youth and adult baked
goods were entered. Judging
commenced at 10:00 a.m.
and at noon the bake sale
began with donated entries.

the DeLeon 4-H Club. The

2013 District 4-H Food
Challenge and Food Show
was held at the Bell County
Expo Center in Belton on
December 11th. Comanche
County had two Junior
Teams and two Senior Teams
participate in the Food
Challenge. The Senior Team,
Baxter’s Angels, participated
in the Fruits and Vegetable
category and received 3rd
Place overall. Team members
included: Baxter Krug,
Maggie Moerman, Jessica
Ross, Jolee Jones andMakayla
Donough. The Senior Team,
Food Ninjas, participated in
the Main Dish category and
received 4th Place overall and
won the Team Spirit Award.
In the Food Show, Shandon
Johnson received 3rd Place
in the Grains category.
Congratulations to all these
4-Hers that represented
Comanche County.

throughout Texas. The Texas
4-H One Day 2013 Report has
incredible numbers to report
for its success. Throughout
Texas on Saturday, October
12th, the One Day event was
promoting 4-H with 16,150
youth and adult volunteers
conducted more than 395
projects across Texas
reaching 699,000 citizens.
Efforts include: over 138
cleanup, recycling and
beautification projects took
place at community center
and home and more than
343 miles of Texas highways
and beaches were cleaned;
donations of $115, 928 was
raised from 4-H members to
support other organizations
and causes throughout Texas,
55,063 pounds of food
was collected through 71
drives for banks and other
organizations, care packets
with a value of $14,239 were
made and delivered to seniors,
military and youth needing a
hand. Volunteer hours soared
at 26,916 hours or $595,920
of volunteer time was given
during the 2013 state-wide

Twas the night before Christmas, out there on the plains
And all Mama and Papa talked of was rain
We knew times were bad, that we had a drought
But there were other things me and Bobby were thinking about
For tomorrow was Christmas, and let it be said
We were in no hurry to jump into bed
The tree was just setting there, bare as could be
It had decorations but not a present to see
We’d looked in the cellar and under the beds
Checked all the closets and out in the sheds
Now we’d had bad times before
But there was candy, and presents and more
We heard Papa say, "Hon, I’m just about through
If it don’t rain in the next day or two
I guess we’ll have to leave here, just pack up and go
We’ve done all we could, and that’s all that I know
We can go and stay with your folks for a while
And I’ll give that feed store job a trial”
Me and Bobby looked at each other and we were ashamed
All we’d asked for was presents and things
Mama and Papa, well, they were really hurting
We went on to bed and one thing for certain
When we said our prayers, we didn't ask for things
We just asked God to please send some rain
We woke up and heard on the roof,
what we knew must be Santa and his reindeer's hoofs
We jumped out of bed and opened the door
We saw a sight we'd not seen before
Mama and Papa were jumping and yelling
It took us a minute to hear what they were telling
’’It's rain, boys, that's rain coming down
We won't have to leave here and move into town”
There never was a prettier sight
Than rain coming down on that Christmas Eve night
Cause when you're happy and love's in the air
It don't even matter if presents ain't there
I'll tell my kids about Christmas out on the plains
When God answered prayers, and Santa brought rain

White Chocolate
Peppermint Cheesecake
What You Need
1 box Nilla Wafers •
1 stick butter, melted
8 oz. Ghiradelli Vanilla
Dream White Chocolate
24 oz. cream cheese (3 pkg),
room temp
1 1/2 c sugar
6 eggs
16 oz. sour cream
25 Starlight mints
Directions
• Preheat oven to 350 degrees
F. Finely chop wafers in food
processor. Add melted butter. Pour ,
into spring form pan and press
against bottom and half way up
sides. Bake for 10 min.
• Meanwhile, melt 4 oz white
chocolate in double boiler. When ,
crust comes out of oven, pour
white chocolate over bottom. Place
in refrigerator to harden.

> For cheesecake, melt remaining white
chocolate in double boiler and set
aside to cool slightly. Cream together
cream cheese and sugar. Add eggs
one at a time, mixing smooth after
each addition. Add sour cream and
cooled chocolate; mix well.
» Smash mints into fine powder and
fold into cheesecake mixture.
»Reduce oven temp to 300 degrees F.
Pour cheesecake mix into prepared
pan. Fill within 1/2-inch from top.
»Place a baking pan half filled with hot
water on bottom rack of oven. Place
cheesecake pan on baking sheet (in
case spring form leaks) and place on
rack above pan holding water.
»Bake for 1 1/2 hours. After that, turn
off oven and let cheesecake sit for 4
hours, then refrigerate overnight.
