St. Patrick’s Day Recipes
Irish Potato Candy
1/4 cup butter-softened
8 ounces cream cheese
1 teaspoon vanilla
4 cups confectioner's sugar
2-1/2 cups coconut
1 tablespoon ground cinnamon
In a medium bowl, beat butter,
cream cheese together until smmoth
Add vanilla and sugar and beat until
smooth. Using hands if necessary,
mix in coconut. Roll into balls or
potato shapes and roll in cinnamon.
Place on cookie sheet to chill to set.
Roll in more cinnamon for darker
color.
Irish Soda Bread Cookies
2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon baking soda
1/2 cup butter
1/2 cup currants
1/4 cup buttermilk
•egg
1/4 teaspoon salt
1 teaspoon caraway seeds
Preheat oven to 350 degrees.
Combine dry ingredients in mixing
bowl. With pastry blender, cut in
butter until mixture resembles meal.
Stir in currants. Mix in beaten egg.
Pour in milk and with a fork make
soft dough. On floured board, knead
dough lightly 5-6 times. Roll out
and cut into squares and triangles.
Bake 12-14 minutes.
Zucchini-Oatmeal Cookies
1/2 cup butter
3/4 cup white sugar
•egg
1/2 teaspoon vanilla
1-1/2 cup grated zucchini
1-1/2 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup quick cooking oats
1 cup granola
2 cups semi-sweet chocolate chips
Preheat oven to 350 degrees. In
medium bowl, cream butter and
sugar until fluffy. Stir in egg and
vanilla and mix well. Stir in zuc-
chini. Sift together flour, baking
soda and cinnamon and stir into zuc-
chini mixture. Stir in oats, granola
and chocolate chips. Drop by
spoonsful onto prepared cookie
sheet and bake 12-15 minutes until
done.
Irish Flag Cookies
1 cup butter
1- 1/2 cup confectioner's sugar

1 teaspoon vanilla
2- 1/2 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
In large bowl, cream together
butter and sugar. Beat in egg and
vanilla; mix well. In medium bowl
stir together dry ingredients and
blend into butter mixture. Divide
into thirds and shape into balls.
Working with l/3rd of dough at a
time, roll out 1/4 inch thick and cut
into rectangles 2 x 3-inches. Place
on ungreased cookie sheet and bake
in preheated 350 degTee oven for
12-15 minutes. Frost.
Irish Flag Frosting
1 cup confectioner's sugar
1/4 teaspoon salt
1/2 teaspoon vanilla
1 tablespoon water
2 drops orange food coloring
2 drops green food coloring
Blend sugar, salt and vanilla.
Add just enough water to make
frosting easy to spread. Divide
frosting into 2 small bowls. Add
omage food coloring to one and
grren to the other. Mix until each
are colored evenly. Frost 1-inch of
the left side of each cookie with
green and 1-inch of the right side of
the cookie with orange frosting.
Leave middle inch unfrosted.
Blarney Stone-Kissed Cookies
1 cup butter-softened
I cup white sugar

1 teaspoon vanilla
1-3/4 cup all-purpose flour
1/2 cup cocoa
1-1/2 teaspoon baking powder
1/2 teaspoon salt
36 Hershey’s Kisses
Frosting:
3/4 cup confectioner's sugar
3-1/2 teaspoon milk
1/4 teaspoon vanilla
3 drops food coloring
Beat butter, sugar, egg and va-
nilla in large bowl until blended.
Stir diy ingredient together and
blend into butter mixture. Beat un-
til well blended. Divide dough into
half and place on separate sheets of
wax paper. Shape each half into log
with squared sides, about 7 inches
long and 2-1/4 inches wide. Wrap
each log in wax paper and refriger-
ate for at least 8 hours. Heat oven
to 325 degrees and cut logs into 3/8
inch slices. Place onto ungreased
cookie sheet. Bake 15 minutes and
cool slightly. Cool cookies and re-
move wrappers from kisses. Stir the
last 4 ingredients together well and
add 3-4 drops of food green color-
ing until drizzle-consistency.
Drizzle over top of cookie and im-
mediately top with a chocolate kiss.
