The Index is proud to introduce its cooking column by
featuring Mrs Stick Vance as the cook of the week
Mrs Vance said that this was the first time she has ever
measured the ingredients for her Chicken and Rice Casserole
but that her daughter in-law helped her with it She said that
this recipe had always been one of those “little bit of this and
about that much of that” type This recipe is a favorite of the
Vance family and one that makes her the sweetheart of cooks
as far as Don is concerned

SPECIAL...
I 3 4 pound fryer
1 and one half cup long
grain rice
1 bunch green onions ‘
1 cup diced celery
'A t. poultry seasoning
1 small can
mushroom stems
pieces
2 chicken bullion
cubes
1 stick of oleo
1 small yellow onion
1 T. parsley
1 cup mushroom soup
salt and pepper to taste
Place cut up fryer in large pot /
and cover with water. Boil until
tender. Re move chicken from pot
and debone it
Reserve one cup of the broth and
/ bring the rest to a boil.
Add buMion cubes and
rice, return to boil and
reduce heat. Cover
and steam until rice
is tender (about 15
minutes).
Saute onions and
celery in oleo until
tender Add parsley,
stir gently into rice mix-
4 ,ure w'fh poultry seasoning,
&g mushrooms, soup, salt and pep |
Per to ,as,e Pour into casserole
O and pour the reserved cup of broth
over the top Bake uncovered in 350°
oven until top begins to brown. Approxi-
mately 30 minutes.
MRS. STICK VANCE serves up a portion of her Chicken
ond Rice Casserole which is a family favorite in her
house.

Housing Project on First Street in Ingleside twenty three
members weighed in.
TOPS best loser of the week was Delores Roberts and run
ner up was Ruth Vance. Mae Wdkerson was the KOI* closest
to her goal Ruth Thompson was chosen as angel of the month
and Mae Wilkerson, a KOP, received a charm for being on or
below her goal for six week.

TOPS 455 met at the Methodist church on Monday, Feb 8 at
9 a.nr Best loser of the week was Lela Babbit and runner up
was Flex Stein Pope
Joyce Patterson won recognition in the TOPSI contest and
Grace Workman was queen of the month for January
A little boy
Mr and Mrs Randy A Davis
of Corpus Christi and formerly
of Aransas Pass announce the
birth of their son, Brandon
Allen, born at 9:45 a m. on
December 30 of 1981 at Spohn
Hospital
He weighed nine pounds and
two and one half ounces at birth
and was 21 inches long.
He is greeted by a brother,
Ryan who is three and one half
years old Also by his maternal
grandparents, Mr and Mrs
Kurt Larson of Ingleside and his
paternal grandparents, Mr. and
