This recipe
won 2nd-place in
the Ingleside
Round-Up Bean
Cook-Off. It is
from Pat Hart-
man, a retired
Greyhound Bus
driver. Pat says
“Wash two
pounds of beans
and remove the
large stones.
The small stones
won’t be noticed
and may add
more flavor. Cut
up one large
10-15 onion,
one pound of salt
pork in eight to
ten pieces, chop
a couple of hot
peppers, smash
four cloves of
garlic, a handful
of black pepper corns that have been ground up in a pepper mill
or mulcahete, then salt to taste. Then you put all the ingredients
with the beans in a pot and cover with four to five inches of water
from an ice chest of melted ice from a previous party, simmer for
three hours or until tender. For thicker juice, mash up one cup of
the beans and pour back into the pot. If more water is needed
during cooking, use boiling water.”
He calls these beans “Dr.Tastegood’s Medicinal Purposes Only
Pinto Beans”. Pat’s wife works at the Occupational Medicine
office in Ingleside.
