Refreezing
Foods
If you are concerned about
what foods can be safely
refrozen, here are some
guidelines to follow. Re
.. member that while many
frozen foods may be refrozen
with nodanger, they may be
lacking in some of their
original quality.
Meats—Do not refreeze if
they have warmed to room
temperature and have com
pletely thawed. If complete
thawing has occurred, red
meats should be cooked
immediately. They can then
be refrozen. Partially
thawed variety meats,
sausages and hamburgers
should be cooked immedi
ately.
Fruits—Completely thawed
fruits should be used
immediately. Fruits may be
refrozen, but there may be a
quality loss.
Prepared Foods—(Meats
in cream sauces, frozen
dinners, cream pies and
leftovers). These are best
discarded or cooked immed
iately if they have thawed
completely.
Frozen

reconstituted according to
directions and used.
Fish—If it has completely
thawed, it is best consumed
on the spot or thrown out
since it can spoil very
rapidly.
Poultry—If poultry has
thawed, but is still quite cold
to the touch, it may be
cooked and refrozen. Any
stuffed poultry should be
discarded.
Vegetables—Vegetables
that still show ice crystals
may be refrozen but should
be used as soon as possible.
If completely thawed, you
can refreeze some vegeta
bles plain ones, not those
with sauces ... if they have
not been held at room
temperature too long. Vege
tables may also be cooked
and refrozen separately or
as ingredients in a casserole
or other dish.
Breads—Can be refrozen,
however, the freshness may
be affected.
Cakes—Can be refrozen,
however, this sometimes
produces dryness and
affects the quality of the
icing.

Week in the game last
Friday night at Pilot Point.
Jennifer is a freshman
member of the Cherokee
Charmers and received a
superior rating in the
summer drill team camp.
She was elected at the
summer camp as social
co chairperson of the drill
Indians Lose Final to
Pilot Point
PILOT POINT - The
Pilot Point Bearcats erupted
for three touchdowns in the
last three minutes of the
first half here Friday night
and broke open a tight
ballgame as the Bearcats
rolled to a 35 6 victory over
the Sanger Indians.
Pilot Point got on
scoreboard midway through
the opening quarter follow
ing a 15 yard punt return by
David Carroll that put the
Bearcats in business at the
Sanger 25.
Quarterback Jeff Thomas
connected with Carroll for a
20 yard gain on first down
and then three plays later
Thomas scored on a bootleg
from four yards out. Carroll
tacked on the PAT kick and
Pilot Point held a 7 0 lead.
Sanger scored its touch
down early in the second
quarter, driving 55 yards
before Buster Thomas got
the TD on a 25 yard run
around left end. The extra
point kick was wide.
Pilot Point didn't waste
any time getting back on the
J scoreboard after taking the
Sanger kickoff and marching
80 yards. Jerome Johnson
was the big man in the drive
for Pilot Point as he picked
up 49 yards on five carries
but Thomas got the
touchdown on a one yard
run and with Carroll’s kick,
the Bearcats had a 14 6 lead.
Pilot Point used an onside
kick by Archie Harris to get
the ball back and this time
Curtis Hampton got into the
offensive attack. He picked
up 25 yards on one carry,
caught a nine yard pass and
finally scored on a two yard
run. Carroll again was true
with his kick and the
Rearcat lead had climbed to
21 6.
An interception by Chris
Curtis set up Pilot Point's
next score. Carroll, on a split
end reverse, pulled up and
tossed a 46 yard strike to
Curtis for the touchdown
and with Carroll's kick, the
Cats held a 27 6 halftime
margin.
Pilot Point put the final
points on the board midway
through the fourth quarter.
Dennis Hollar got the
t touchdown on a 13 yard run

Coach Ken Cook seems
highly optimistic about his
Sanger Indian basketball
team for this year. He’s got
some good players back in
Joey Higgs, Rick Wilson,
Ruster Thomas, Joe
McWhorter, Jim Rob Ready,
and Kevin Hodges. The only
problem seems to be a lack
of height with McWhorter
being the tallest at 6 4.
Coach C<x>k expects
Bennie Chambers, Kevin
Kemplin, Roger Kincaid and
Willie Henderson to help out
with Juniors Jeff Springer,
Curtis Amyx and Steve
Coffey contributing to the
club.
He’s not sure
playing status of
Henderson since Willie has a
job after school and its going
to be hard for him to play
and work. Willie could be a
very important part of the
team’s success.
Pilot Point, Celina and
Sanger are favored in the
District race with Pilot
Point losing only one starter
from last year's team and
Celina returning most of
their folks. Since Celina will
be playing football for a
while longer they will be a
little slow in coming around.
Coach Steve Balthrop's
girls team really has some
height this year, not much
experience with only one
senior on the team but
better things are on their
way for the rebuilding girls
team.
Go see the girls and the
boys play Torrestburg this
Thursday.

The Sanger Indians kick
off the 1978 79 basketball
season Thursday night with
a 7:00 p.m. encounter
against Forrestburg. Coach
Ken Cook expects Sanger to
have an outstanding team.
Coach Cook has an
nounced that the starters for
this weeks game will be
Buster Thomas, with Joey
Higgs at guards with Rick
Wilson and Joe McWhorter
at the post positions. The
fifth starter will be either
Jim Bob Ready or Kevin
Hodges.
Buster Thomas and Joey
Higgs were both injured in
last weeks final football
game so their play may be
limited for this weeks
games.
Other Indian players are
Kevin Kemplin, Craig
Waggoner, Roger Kincaid,
Curtis Amyx, Steve Coffey,
Willie Henderson, and Jeff
Springer.
The Indian Varsity Girls
game with Forrestburg will
kick off the nights action,
the girls are coached by
Steve Balthrop.
