was with the 142nd Infantry of
the 36th Division. He left Camp
Edwards, Mass., in April 1943,
and landed in Africa later, being
a part.-of the invasion of Saierno,
Italy. He was- in the battles of
Cass no', Anzio, Kapedio. He

ter of the tray of fruit. Leave
the oven door about 1-3 to 1-2-
open. Stir the fruit often as it
is drying to prevent getting too
hot. S art peaches at 125 de-
grees F. Gradually increase to
175 degrees. When it is about
half dry,- decrease the tempera-
ture to abyut 150 degrees. It is
especially important to watch
the fruit often toward the end
of the drying period- It takes
6 to 15 hours according to type
of heat, circulation of air and
size of peaches.
Test For Dryness
When peaches are dry they
are pliable and leathery and not
sticky.' They have a spring feel.
Good. Storage Is Essential:
Proper storage is as important
as the actual drying. Sun-dried
fruit should be heated to about
15G degrees F, in an oven tor
15 to 30 minutes. Stir fruit’ as
it is heating. Have cans of jars
and lids clean, hot and dry.
Pack the hot fruit into hot con-
tainers and seal immediately.
Self-seal lids are most satisfac-
tory. if jar? are used? If fr-u.it

There Are Two Ways
To Dry Fruit
Method J is Sun Drying: Use
this method only where the at-,
mosphei’e is dry. Arrange fruit
on, slatted or wire trays which'
have been covered with cheese-
cloth, Cover fruit with cheese
cloth to .keep out insects and*
dust. Two window screens
placed together make a tempo-
rary drier in' an emergency,
cover the bottom screen with 'a
cheese cloth or very thin cloth
to prevent fruit coming-in. Con-
tact with screen and dust. Place
die screen or saw horses or other
props so that air can circulate
under, as well as over the fruit.
If a window glass is placed sev-
eral inches above the fruit, it
raises the temeprature ten to
— fifteen ’ degrees " and dries the
fruit faster. It takes about 2 or
3 days for peaches to dry thor-
oughly in the sun. Fruit should
be taken in at .night or in case
of w*) shower during the day. • ---

food value, but usually do not

flavor. Plain boiling water or
fruit juice is used instead of
