Pralines Are New Orleans’ Historic Treat
New Orleans is famous for its many culinary delights, and
pralines are probably the most well-known candy of the city.
The candy was the creation of a French marshal’s chef, who
in an effort to satisfy the marshal’s sweet tooth, coated al-
monds with sugar and named the confection after the marshal,
Cesar du Plessis Prasline (pronounced pralin).
In the early days of this country news traveled slowly from
Paris to New Orleans, but. eventually travelers returning from
France brought back the idea for the candy that Marshal
Prazline’s chef had developed American cooks took it one step
further, preparing a confection of pecans and brown sugar,
using several nuts in each patty.

Mrs. Smothers also writes on
the life of Margaret Hallett (1787
- 1863) noting that the town of
Hallettsville was named after
this early pioneer.
"Because of her bravery,
strength of character, insight,
and willingness to help her
neighbors, Margaret was ac-
claimed leader of the settlement
and soon became a legendary
figure in the area," reports Mrs.
Smothers.
Mrs. Hallett, the wife of a San
Jacinto veteran who donated the
town site of Hallettsville, was
among the settlers forced to flee
to East Texas to avoid Santa
Anna's armies.
Mr. Smothers, whose maiden
name was Turk, and her
husband, Robert F., are natives
of Hallettsville.
