TOPS
Someone should call the law on
Martha Smitty: She's so happy
it should be illegal. The spunky
lads loses her husband, her kids,
her grandkids. her friends, her
neighbors. Bright Star Baptist
Church, cooking... just every-
thing about life in general.
f orget the fact that she has bad
knees and hubbv Robert has had
major-league cancer and other
health issues. The sheet-rock on
her walls is not finished and
the Smittys aren't rolling in the
dough, but those things don't
matter one iota, except for the
tact that she has trouble get-
ting around in Wal-Mart. Martha
shared, ' I've never regretted one
das of ins life, and how many
people can say that?"
While a girl grossing up in
Rs lie outside Dallas, she met
and married Robert when she
seas only 15 and he was 16.
Acknowledging that people who
marry that young usually don't
make it. Martha said their 49-
year-old marriage is solid as a
rock, and their kids base “a little
something" planned for their
50th. Interestingly, the couple,
their children and her mom were
all born in November. Must have
been something in the water back
then in February.
Speaking of those kids, James
lises in Lindale. Carolyn Gail
lives in Pleasant Grose, and Ruth
Ann Uses in Mesquite. "I love
'em to death but don't get to see
them as much as I'd like," she
added. April Dawn is the grand-
daughter who lost her mother,
and Granny and Grandpa helped
raise her. Then there are grand-
kids Taylor Steven. Hannah Rae,
Mark, J.T, Janies Carl and Tanya
Nicole. Four greats round out the
bill and. needless to say, all their
photos cover the walls.
Now to Martha's wonderful
cooking. Friend Ann Tipton,
who gave me our guest’s name,
said men at church arm wrestle
over who is to get a piece of
Martha's pie. She's that good.
"I’d rather cook than eat a sand-
wich," Martha shared with a grin
and went on to explain how she
cooks from scratch and what she
does to make things tasty. For
instance, for homemade corn-

bread she uses only white meal,
and the buttermilk must be from
Braum's. “No other is as good,"
she said.
Red beans. Everybody around
here eats them, but here's how to
cook them. Pick out the rocks,
wash them, and cook them in
a big pot. If you need to add
water, it should be hot. That's a
must. Season, add three to four
teaspoons of minced garlic and
some Gebhardt’s chili powder.
Then add some bacon grease. To
make the juice thicker, just mash
the beans a little. Yummy.
How about stretching a small
amount of vegetables a long
way? Dice squash, okra, onion,
potatoes and mix all together in
white commeal and fry. Deli-
cious!
However, she does buy a few
things off the shelf like Bush's
purple-hulled peas. Martha takes
two cans and adds slices of dry
salt bacon. Makes you lick your
lips. Another store-bought prod-

uet that works for her is the big
can of Kentucky wonder green
beans at Dollar General. Just add
about one and one-half cans of
water to two cans of beans, two
strips of bacon with the drip-
pings and some new potatoes.
Can't beat 'em.
Lest l forget, the Smittys were
headed to the Dairy Queen in
Emory as soon as I left. Ham-
burgers are a bargain there on
Wednesdays, she shared.
As for her photo, our guest
is pictured cutting the delicious
coconut/angel cake so I could
take half home. What a treat.
Martha also gave me a Hour-sack
cup towel (some folks might call
it a tea towel) that she hand-
embroidered and said she enjoys
embroidering pillowcases tot). I
felt: like I'd stepped back about
50 years in time.
About herself, the generous
lady said with a smile, “I'm just
an old country bumpkin whom
God made to help others. I cry
easy too." She talks often to
sisters June and Alice. Mother,
Maggie Morris, as well as broth-
ers Freddie and Earl are still
around too.
About Robert, she said, “He's
the love of my life. He makes
the bed every day, and I do
the bathroom and kitchen. I’m
the one who loves to cook, but
he helps me clean up. He’s my
sweetheart, and I wouldn't trade
him for anything."
When the Smittys moved to
Steamboat Shores 23 years ago,
people asked how they'd get by.
Her answer? “I told them the
Lord would take care of us.’’
The couple prays together about
important decisions, and she
said that God has done what He
promised.
All in all, there aren't any
changes in the future for Martha
Smitty. She'll continue to live
right where she lives, to help
older people and to take food to
neighbors and church. Robert
will do all the driving and con-
tinue to be her knight in shining
armor. For sure, the Smittys will
stay involved in church and live
life the way the Lord sees fit. “I
look forward to every day," the
thoughtful lady said. It shows,
Martha, it shows.
Tdmnle Casserole
2 cans hot tamales
l onion, chopped
l/2 Ih. American cheese
l can chili without beans
Grease casserole dish; place 1
can of unwrapped hot tamales in
bottom of dish. Add half the onion
and 1/2 of the cheese and 1/2 of the
chili on top of the tamales. Repeat
for second layer. Hake at 325 deg.
! for about 20 minutes. Yield: 8 serv-
ings.
Pineapple/Avgel Cake
1 box angel food cake mix
1 20-oz. can crushed pine-
apple
Mix all together in a large bowl
and put into a Bundt cake pan.
Bake at 300 degrees until done.
Breakfast Treat
1 can biscuits
1/2 stick margarine
2 tsp. cinnamon
5 heaping tsp. sugar
Mix margarine in sauce pan.
Combine sugar and cinnamon. Dip
biscuits in melted margarine then
in sugar-cinnamon mixture. Bake
on greased cookie sheet for 8 to 10
minutes at. 450 degrees. Serve hot.
Chocolate Pie
1 c. sugar
2 Tbsp. flour
1 Tbsp.cocoa
1 c. evaporated milk
3 egg yolks
2 Tbsp. butter
After mixture has thickened
remove from heat. Add 2 table-
spoons vanilla flavoring. Pour into
baked pie shell.
Cheese Ball ;
2 8 oz. pkg. cream cheese i
1/2 c. minced onions
1 Tbsp. bacon bits
1 Tbsp. liquid smoke
2 Tbsp. garlic salt
Mix all together and roll into a
hall. Put in waxed paper and put
into refrigerator overnight. Serve
with chips.

recipe
People who read the Leader
are observant. Shirley Stroud of
Mount Vernon, who reads the
paper online, noticed in Sherry’s
Lindsey's June 13 Kitchen Scents
article/photo that the vibrant
woman was holding a dessert that
looked delicious. However, the
recipe wasn't listed and Shirley
e-mailed the Leader in hopes of
getting it. Here it is, Shirley:
Easy English Trifle
1 small box vanilla instant pudding
1 small box cheesecake instant
pudding
1/2 tsp. vanilla extract
1 tsp. lemon extract
1 small Cool Whip
1 pint strawberries, sliced and
whole
1 pint blueberries
9-10 slices pound or pudding cake
Make puddings according to
directions and mix together. Fold in
Cool Whip and flavorings. Layer in
deep glass bowl (clear if possible),
the cake, the pudding mix, and both
berries, ending with whole berries
on the top. Refrigerate for at least
three hours.

lar session on June 26. The meet-
ing was called to order by leader
Jan Bums. She also gave the de-
votional.
We all said the TOPS pledge
and sang the TOPS song. KOPS
said the KOPS pledge.
Linda Franklin called roll with
six weighing in. Rubye Raymer
was TOPS best loser. Bonnie
Mays won the money can.
Lori Wilson read the minutes
as approved. Jan Bums gave the
program last week on TOPS ten
things to do avoid snacking, and
18 more things to do to prevent
snacking and the TOPS ten pain-
less, healthy practices you can
start today.
We closed with our Helping
Hands pledge and sang the Good-
night song.
TOPS TX 1244 met again on
July 3 in regular session.
The meeting was called to or-
der by leader Jan Burns. She also
gave the devotional.
We all said the TOPS pledge
and sang the TOPS song. KOPS
said the KOPS pledge.

grams in June.
