BAKED EGGPLANT
By Harriett Apple
1 medium egg plant
1 onion
1 large tomato
1 egg
Handful of bread crumbs
or cracker meal, salt, pepper
and a pinch of sage.
Peel egg plant, cube and
cook until tender, drain off
water. Mix all ingredients
together, pour into greased
casserole and top with
cheese. Bake 1 hour at
approximately 325 or until
bubbly.
