Open House Held
For Trinity Women
Open House for all women
of Trinity Lutheran Church
was held by Mrs. O.R.
Jenson at her home at 1307
Park Street, Clifton, on Mon-
day afternoon, Dec. 15, from
2-5 p.m.
Mrs. Jenson is president-
elect of the Trinity Lutheran
Church Women and will be
installed with other incoming
officers at the January meet-
ing. She will serve a term of
two years.
The 1981 officers of the
T.L.C.W. and outgoing pres-
ident, Mrs. Milton Brown,
assisted the hostess during
the afternoon, including
Mesdames: Arthur Will-
man, Irene Ganjjshei, Her-
man Reesing, Hans B. Dahl,
and G.E. Jackson.
Guests were welcomed by
the hostess, Mrs. Jenson,
and Mrs. Eldon Zimmerman
and Mrs. Vernon Swenson,
president and vice-president
respectively of the Waco
Conference of The American
Lutheran Church Women.
Mrs. Will Krueger, Jr. reg-
istered guests and presented
each with a book mark giving
information relating to the
1981 course of study, People
of God, based on the book of
First Peter of the New
Testament.
The serving table was laid
with a handmade white net
cloth, appliqued with white
felt poinsettias, over green.
The centerpiece, a family
heirloom, featured a harp
and an angel. Other table
Big Game Sausage
Smoking, Storing
Smoke and store big game
sausage properly.
Smoking
There are many ways to
smoke meat.
One way of smoking is to
build a small fire out of
hardwood (pecan, hickory or
oak) at the end of a backyard,
closed-type cooker.
Burn it until live coals are
obtained, then put a few
hardwood chips on the coals.
Place the sausage or cured
meat cuts on the rack on the
opposite end from the coals.
Use enough water on the
chips so they do not blaze,
and smoke the sausage with
the cooker closed. Keep the
temperature of the cooker
between 130 and 150 degrees
F.
Or, make a smokehouse
from any closed device such
as an old refrigerator or oil
drum.
An air inlet is needed at
the bottom and a damper at
the top. Some method for
keeping the interior hot is
also needed.
The whole smoking and
drying procedure can be
accomplished in one of these
devices but requires close
watching.
Try a small quantity at first
to develop your own special
method. This is not an exact
science.
Storing
Store fresh sausage in
refrigeration for one week or
in the freezer at zero degrees
F. for not more than three
months.
Salt added to the meat
reduces freezer storage time
by about 50 percent.
Before freezing, wrap sau-
sage in freezer paper, plastic
freezer bags of foil.
Wrap bulk sausage and
place directly into the freez-
er.
For cured and smoked
sausage, hold in refrigera-
tion for two to three weeks or
store in the freezer.
Protect and store cured
and smoked sausage using
the same method as for fresh
sausage.
Keep cured and smoked
sausage in the freezer no
more than three months.
appointments were cut glass
and silver.
Red velvet cake logs iced
completely with pale green
frosting and decorated with
spun sugar holly leaves were
sliced and served to each
guest. Also, assorted cook-
ies, mints, salted nuts and
hot orange tea were served.
Near the party table, Mrs.
Jenson had artistically ar-
ranged on the top of an
antique side board, a display
of the New Year's study: a
Bible opened to First Peter,
the Scope (Bible Study Mag-
azine and Guide) and the
Resource Book, “Now We
Are God’s People.” Ropes
of holly and red carnations
further enhanced the ar-
rangement.
The many women that
called during the afternoon
expressed enjoyment for the
hospitality, the holiday decor
of the home, and the graci-
oi'sness of the host.
Rate Freeze
Notice To All Advertisers:
Most newspapers adjust their advertising
rates at the end of each year to reflect increases
in the cost of living. The Clifton Record, to do
its part in the fight against inflation, announces
that it will freeze its open display rate for the
coming 12 months so that businesses and
individuals can still afford to advertise during
these tougher-than-usual times. The open rate
will be the same as it was one year ago,
$1.82 per column inch.
Frequency and combination discounts will
also remain in effect, as they have been during
the previous 12 months, with the exception that
discounts only apply to cash in advance
advertising and advertising that is paid by
approved-credit customers no later than 30 days
after the end of the month when the advertising
was published. All advertising past due beyond
this time period will be charged at the open rate.
