celebration of both.
Time to tailgate
These make-ahead recipes
are ready to eat straight out of
the cooler. Simply open up con-
tainers, and you’ll have a crowd-
pleasing spread.
MINI MUFFULETTAS
Tailgate Tip: You can eas-
ily make these Mini Muffulettas
the day before the party. Just
assemble, place in zip-top, plas-
tic freezer bags, and refrigerate
overnight. Store-bought craft
paper and simple twine create
clever sandwich wrappers.
2 (16-oz.) jars mixed pickled
vegetables
3/4 cup pimiento-stuffed
Spanish olives, chopped
2 tablespoons bottled olive
oil-and-vinegar dressing
12 small dinner rolls, cut in
half
6 Swiss cheese slices, cut in
half
12 thin deli ham slices
12 Genoa salami slices
6 provolone cheese slices,
cut in half
Pulse pickled vegetables in
food processor 8 to 10 times or
until finely chopped. Stir in ol-
ives and dressing.
Spread 1 heaping table-
spoonful pickled vegetable mix-
ture over cut side of each roll
bottom. Top each with 1 Swiss
cheese slice half, 1 ham slice, 1
salami slice, 1 provolone cheese
slice half, and roll tops. Cover
with plastic wrap. Serve immedi-
ately, or chill until ready to serve.
Makes 12 sandwiches
TURKEY CHEDDAR
KABOBS
AND DIPPING SAUCE
1 pound deli-smoked turkey,
cut into 1-inch cubes
1 (8-oz.) package Cheddar
cheese cubes
1 pt. grape tomatoes
1 (16-oz.) jar dill gherkin
pickles
27 (4”) wooden skewers
Honey Mustard Dipping
Sauce
Thread 1 each of first 4 in-
gredients evenly onto wooden
skewers. Cover and chill 30 min-
utes or up to 1 day. Serve kabobs
with Honey Mustard Dipping
Sauce.
Honey Mustard Dipping
Sauce: Stir together 3/4 cup
light mayonnaise, 1/4 cup coarse
grained Dijon mustard, and 2
Tbsp. honey. Cover and chill 20
minutes or up to 3 days. Makes
about 1 1/2 cups. Prep: 5 min.,
Chill: 20 min.
The dipping sauce is also
great served with fried chicken
breast strips.
GRAHAM NUT CLUSTERS
6 c honey graham cereal
1 c honey-roasted peanuts
1 c coarsely chopped pecans
1/2 cup butter
1 cup firmly packed light
brown sugar
1/4 cup light com syrup
Wax paper
2 cups pretzel sticks
1 cup candy-coated choco-
late pieces
Preheat oven to 350°. Com-
bine cereal and next 2 ingredi-
ents in a very large bowl.
Melt butter in a 3-qt. sauce-
pan over medium-low heat; stir
in sugar and com syrup. Bring to
a boil over medium heat; boil 2
minutes.
Pour butter mixture over ce-
real mixture, and stir quickly to
coat. Spread in a single layer on
a lightly greased aluminum foil-
lined jelly-roll pan.
Bake at 350° for 10 minutes.
Transfer to wax paper, and cool
completely (about 10 minutes).
Break into pieces, and toss with
pretzel sticks and chocolate piec-
es.
BLUE CHEESE
RANCH DIP
1 (16-oz.) container sour
cream
1 (1-oz.) package Ranch dip
mix
1 (4-oz.) package blue
cheese crumbles
2 tablespoons chopped fresh
chives
Stir together sour cream,
Ranch dip mix, blue cheese
crumbles, and chopped fresh
chives. Serve with carrot and
celery sticks, sturdy potato chips,
and hot wings.
LAYERED SPICY
BLACK BEAN DIP
1 (8-oz.) package cream
cheese, softened
1 (16-oz.) jar spicy black
bean dip
1/2 (8-oz.) package shred-
ded Mexican cheese blend
Toppings: sliced green on-
ions, chopped tomatoes, sliced
black olives
Assorted tortilla and corn
chips
Layer cream cheese, dip,
and cheese in a 1-qt. serving
dish. Add toppings, and serve
with chips.
CHILE-CHEESE SPREAD
Make this z.esty starter up to
three days ahead. Serve leftovers
on sandwiches.
2 (8-ounce) packages light
cream cheese, softened
1 cup (4 ounces) shredded
Cheddar cheese
3 green onions, finely
chopped
3 canned chipotle peppers in
adobo sauce
1 teaspoon adobo sauce
from can
1/2 teaspoon Creole season-
ing
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon Worcestershire
sauce
1/8 teaspoon hot sauce
1/3 cup chopped pecans,
toasted
Assorted crackers
Garnishes: green onion
curls, pecan halves
Combine cream cheese and
next 9 ingredients in a food pro-
cessor, and pulse 3 times, stop-
ping to scrape down sides. Stir in
toasted pecans, and chill 2 hours.
Garnish, if desired. Serve with
assorted crackers and vegetables.
GUACAMOLE DIP
Tip: While storing in the
cooler, keep your guacamole
from changing color by placing a
layer of plastic wrap directly on
the surface of the mixture.
5 ripe avocados
2 tablespoons finely chopped
red onion
2 tablespoons fresh lime
juice
1/2 medium jalapeno pep-
per, seeded and chopped
1 garlic clove, pressed
3/4 teaspoon salt
Tortilla chips
Cut avocados in half. Scoop
pulp into a bowl, and mash with
a potato masher or fork until
slightly chunky. Stir in chopped
red onion and next 4 ingredients.
Cover with plastic wrap, allow-
ing wrap to touch mixture, and
let stand at room temperature 30
minutes. Serve guacamole with
tortilla chips.
Cilantro Guacamole: Mash
avocado, and stir in ingredi-
ents as directed. Stir in 3 Tbsp.
chopped fresh cilantro and an ad-
ditional 1 Tbsp. lime juice. Cov-
er mixture, and let stand at room
temperature 30 minutes.
OATMEAL-TOFFEE
COOKIES
1/2 cup butter or margarine,
softened
1/2 cup firmly packed brown
sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups uncooked regular
oats
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped pecans
1 (10-ounce) package al-
mond toffee bits
Beat butter at medium speed
with an electric mixer 2 to 3 min-
utes or until light and fluffy. Add
sugar, beating well. Add eggs and
vanilla, beating until blended.
Combine oats and next 3 in-
gredients; add to butter mixture,
beating just until blended. Stir in
chopped pecans and toffee bits.
Drop dough by heaping ta-
blespoonfuls onto lightly greased
baking sheets.
Bake at 375° for 10 minutes.
Cool on wire racks.
CHUNKY CHOCOLATE
BROWNIES
2 tablespoons water
3/4 cup granulated sugar
1/3 cup butter
1 (11.5-ounce) package
semisweet chocolate chunks, di-
vided
2 large eggs
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/4 teaspoon salt
1/2 cup chopped hazelnuts
or pecans, toasted
Powdered sugar
Combine first 3 ingredients
in a 3 1/2-quart saucepan. Bring
to a boil over medium heat, stir-
ring constantly. Remove from
heat, and stir in 1 cup chocolate
chunks until smooth. Let cool 5
minutes. Add eggs, 1 at a time,
stirring just until blended. Stir in
vanilla.
Combine flour and salt; stir
in remaining chocolate chunks
and hazelnuts. Stir flour mixture
into chocolate mixture in sauce-
pan. Spread into a lightly greased
9-inch square pan.
Bake at 325° for 23 to 28
minutes. Cool in pan on a wire
rack. Dust with powdered sugar.
Cut into squares.
To freeze up to 3 months:
Wrap baked brownies in alumi-
num foil, and place in a large
zip-top plastic freezer bag. To
thaw, remove brownies from
plastic bag, and let stand at room
temperature for 3 hours; unwrap
and serve.

AUGUST 26, 1932-
~ The rest room of the First
National Bank was the polling
location in McGregor for the
run-off primary election.
~ McGregor would be cel-
ebrating its 50th birthday on
September 7th. Plans included to
recognize all present who could
date back to the old days of 1882.
Members of the planning com-
mittee were Mrs. EJ. Thomason,
Mrs. J. B. Ford, Mrs. A.L. Lee,
Mrs. W.V. Hanover, Mrs. W.C.
Riddle, Messrs. G.W. Lee, G.W.
England, W.C. Riddle, Joe Cox
and Walter Amsler.
~ End of the month bargains
at Cuenod Dry Goods Company
included boys and girls black and
brown Oxfords for $ 1 a pair.
AUGUST 26, 1942-

AUGUST 22, 1952-
~ McGregor Lion’s Club
members were spearheading
a blood drive for the regional
blood center. McGregor’s quota
was 208 units of blood. Chair-
man Troy Herring was pictured
signing up Rotarian Dr. Bob
Tumlinson. The Lions signed
up 164 citizens, but were still 44
short of the goal. Guy Snelson of
McGregor, who had been diag-
nosed with leukemia in February
had already received 26 pints of
blood from the center.
~ Twenty-five-year old Billy
Roland became the new pastor of
College Avenue Baptist Church.
~ McGregorites could cer-
tainly enjoy going to the movies.
The Ritz had four features this
week and the Texas Theatre had
four on its week-long lineup. The
movies included The Big Trees
with Kirk Douglas, My Son John
with Helen Hayes and Van Hef-
lin, Gold Fever (a Zane Grey fea-
ture), Lost is Alaska with Abbot
and Costello and Canyon Pas-
sage.
~ Brides of the week were
Miss Reba Bumbalow and C.W.
Horton and Miss Geneva Quebe
and Robert Peronnet Barse.
AUGUST 24, 1962-
~ The first phase of a $2.3
million construction program to
extend major production and test
facilities were underway at Mc-
Gregor’s Rocketdyne plant. T.E.
Meyers was general manager.
~ Rickey Lawson, 14 year
old son of Mr. and Mrs. Cal
Lawson was presented his Eagle
Scout Badge.
~ F.A. Morris and Paul
Charles purchased 19 FHA hous-
es in the McGinley addition to
refurbish. The work would begin
immediately.
~ Back-to-School special
offer at Krause Drug Store with
purchase of $3.50 worth of
school supplies were your choice
of a McGregor Bulldog car pen-
nant, McGregor Bulldog wool
jacket patch or McGregor Bull-
dog booster pin.
~ K.Woolens on Main Street
had Penny Loafers on for $2.77
a pair. Men and boys could pur-
chase high top basketball shoes
for $2.88 a pair and blue jeans
for boys were selling for $1.88.
AUGUST 24, 1972-
~ Seven McGregor teenag-
ers traveled to Leon Junction to
do research and try to spot the
ghost on the abandoned railroad
track. Those making the trip
for the story were Bonnie Ann
Mooney, Genie Gardner, Sylvia
Berger, Jimmy Gatlin, Randy
Cathy and Chris Hoffman.
~ Dr. Tommy Barton, a re-
cent veterinarian graduate of
Texas A&M joined Dr. Andy Ai-
nsworth at the McGregor Veteri-
nary Clinic.
~ Bill Ranton became the
new TP&L manager in Mc-
Gregor.
AUGUST 26, 1982-
~ The Mirror published a
72-page Centennial Edition filled
with historical pictures and sto-
ries of McGregor’s beginning in
1882.
~ Thousands of people were
expected in McGregor over the
weekend for the Centennial Cel-
ebration of the founding of the
town. Frances Hudson was the
overall chairman of the festival.
Amy Schmidt was in charge of
entertainment. Chris Witte was
in charge of the food booths and
Paul Spoonts headed up the arts
and crafts area. There was also a
parade, 5K Run, rodeo and street
dance during the day-long cele-
bration. Welcoming guests at the
opening ceremony were chair-
man Frances Hudson, Cavitt
Caufield and Mayor Felix Punk
Morris.
~ Beth Brim became the
bride of James Miller.
AUGUST 20,1992-
~ Frank Graves was installed
as president of the McGregor Ro-
tary club. Serving with him were
Eldon Whitley, Gregg Goeble,
Peggie Eusebio, Virgil Kelley,
Ben Brandt, Kyle Paschall and
Glen Cole.
~ Mike Hollingsworth was
installed as president of the Mc-
Gregor Lions Club. Other offi-
cers were Pat Richardson, Rob-
ert Lamberth, Jim Gailey, John
Hudson, Bud Davis, Mike Beard,
Sidney Kasting and Dean Elliott.
~ Twelve-year-old David
Lofland won second place in the
State 4-H Skeet Shoot.
' Jerry Beasley made a hole
in one on the seventh hole at
Ridgewood Country club. Wit-
nesses were Joe Paschall, Henry
Searcy and C.W. Robertson.
~ The Magic Fingers Quilt-
ing Club raised $1300 for the
McGinley Memorial Library
from proceeds of their quilt give-
away.
~ David Haynes, former
McGregor Bulldog standout, was
named defensive coordinator at
Jersey Village.
AUGUST 29, 2002-
Artist Cuiying Zhang dis-
played Chinese paintings at the
Crawford Community Center.
~ A cooperative effort be-
tween the McGregor Police De-
partment and McGregor School
made conditions much safer at
the T.H. Jenkins Elementary
School during drop offs in the
morning and pick ups in the af-
ternoon. The street became a one
way street early in the morning
during the week and in the af-
ternoon starting a little before
3 p.m. Police Chief was Andres
Gutierrez.
~ Contractors and volun-
teers have been busy getting
the new CTYHA indoor rodeo
arena ready for the first sched-
uled event on September 20
and 21. Before the first shovel
of direct was turned at the new
Central Texas Youth Rodeo As-
sociation indoor rodeo arena just
off Bluebonnet Parkway, around
30 weekends had already been
booked. The first booking was an
Old Timers Rodeo.
