celebration of both.

To warm you up
How do you like this cold
weather? I personally like the
temperature a little on the warm-
er side—let’s say 50 degrees.
That’s cold enough for me these
days.
While trying to stay warm
this Sunday afternoon I started
searching through some of my
soup recipes, and of course, I
also had to look at some warm
dessert recipes. Hope you will
try some of these as winter sets
in for the next several weeks.
Most of the recipes will go
nicely with some good combread
or hot baked breads. Enjoy!
LOADED BAKED
POTATO SOUP
Serves 4-6
4-5 medium russet baking
potatoes
4 tablespoons butter
1/2 cup all-purpose flour, di-
vided
6 cups milk
2 teaspoons salt
1/4 teaspoon ground black
pepper
3/4 cup shredded sharp
cheddar cheese
1/3 cup finely diced green
onions
1/3 cup light sour cream
Toppings:
Sour cream
Shredded cheddar cheese
Chopped green onions
Cooked, diced bacon pieces
Preheat the oven to 375 de-
grees F. Pierce the potatoes all
over with the tines of a fork.
Place the potatoes directly on
the oven rack and bake for about
an hour, until tender and baked
through. Remove the potatoes
from the oven and let them sit
for about 20 minutes, until they
are cool enough to handle (or use
an oven mitt if you don’t want to
wait for them to cool slightly).
Cut the potatoes in half and
scoop out the insides of the pota-
toes. Place the potato chunks in
a medium bowl and mash with a
fork or a potato masher until the
potatoes are broken into smaller
chunks.
In a large 4-quart pot, melt
the butter over medium heat.
When melted, add 1/4 cup of
the flour and whisk to combine.
Cook the mixture, whisking con-
stantly, for 2 minutes until lightly
browned. In a liquid measuring
cup, whisk together the milk and
remaining 1/4 cup flour. Gradu-
ally whisk the mixture into the
pot, and cook until thick and
bubbling, about 6-8 minutes.
Stir in the potato chunks and salt
and pepper. Whisk in the ched-
dar cheese until it is completely
melted. Stir in the green onions
and sour cream. Serve immedi-
ately with desired toppings.
HEALTHY
CHICKEN CHILI
Serves 7
1 T. canola oil
1 cup chopped red onion
1 cup chopped green pepper
2 cloves garlic, finely
chopped
2 jalapenos, thinly sliced
1-1/2 pounds ground chick-
en
1/4 cup chili powder
2 cups canned crushed to-
matoes
1 T. chicken stock
1 T. brown sugar
1 T. apple cider vinegar
1 T. hot sauce
1 T. salt
2 cans dark red kidney
beans, drained
To garnish: (optional)
Light sour cream
Shredded Mexican-blend
cheese
Cilantro
In a large Dutch oven, heat
canola oil over high heat. Add
onion, pepper, jalapenos, and
garlic. Cook over medium heat
until the onion is tender (about
five minutes.)
Add chicken — cook, stir-
ring to break up lumps until
the chicken loses its pink color
(about five minutes). Stir in chili
powder, and cook one minute.
Stir in tomatoes, broth, sug-
ar, vinegar, hot sauce, and salt.
Reduce heat to low; cover and
simmer, stirring often until the
chili is thickened (about 45 min-
utes.)
Stir in beans, cook until
heated through, about 15 min-
utes. Uncover for the last 15 min-
utes of cooking. Top with garnish
of your choice, and enjoy!
BROCCOLI
CHEESE SOUP
Serves 4
Note: To make my life easier,
while the soup is coming togeth-
er, I put the chopped broccoli in
a large glass bowl, cover with
saran wrap and microwave for
about 3-4 minutes. It cooks per-
fectly and just in time to add it to
the soup.
1 3/4 cups chicken broth
1 small onion, diced
1/3 cup all-purpose flour
1/4 cup (4 T.) butter
1/2 teaspoon pepper
1/2 teaspoon salt
2 cups milk
1 1/2 cup shredded cheddar
cheese, preferably sharp or extra
sharp
1/2 cup shredded swiss
cheese
2 1/2 to 3 cups chopped,
lightly steamed or blanched
broccoli
Simmer chicken broth and
chopped onion for 15-20 minutes
in a covered small saucepan, un-
til onions are soft.
Heat milk in microwave for
1-2 minutes.
In a separate medium-sized
stockpot, melt butter then add
flour, salt and pepper. Cook to-
gether, stirring constantly, for 2
minutes, then whisk in warmed
milk. Stir and heat together on
medium heat until soup starts to
thicken, about 5-8 minutes.
Add warmed chicken broth
and continue to stir until well
blended. Add cheeses and stir
until completely melted. Stir in
steamed broccoli. Add more salt
and pepper to taste, if needed.
Serve immediately in bowls or
bread bowls.
HAMBURGER
VEGETABLE SOUP
2 lbs. ground beef
1 1/2 cups chopped onion
2 cups peeled and diced po-
tatoes
2 cups sliced carrots
2 cups shredded cabbage
4 (14.5-oz) cans diced toma-
toes
1/2 cup brown rice, un-
cooked
6 to 10 cups water
1 1/2 to 2 1/2 T. salt
1/2 teaspoon basil
1/2 teaspoon thyme
2 bay leaves
Brown ground beef and on-
ion together until meat is lightly
browned. Drain off excess fat.
Add all remaining ingredients
and bring mixture to a boil.
Cover and simmer for two
to four hours. Check periodically
and add more water, if needed.
Remove bay leaves and serve.
Top it with Cheddar cheese.
Makes 18 to 20 cups of soup.
Can be stored in the refrigerator
for up to four days.
GINGER CINNAMON
APPLE CRISP
Nonstick cooking spray
3/4 cup packed dark brown
sugar
1/2 cup all-purpose flour
11/2 tsp. ground ginger
1 tsp. ground cinnamon
Dash salt
6 T. unsalted butter, cut into
pieces
1/2 cup chopped walnuts
1/2 cup chopped pecans
1/2 cup packed dark brown
sugar
1/4 cup Clabber Girl Corn-
starch or cornstarch
3/4 tsp ground ginger
1/2 tsp ground cinnamon
3 pounds Granny Smith
apples, peeled, cored and thinly
sliced (about 8 cups)
Vanilla ice cream or whipped
cream (optional)
Lightly coat a 2-1/2- to
3-quart (13x9-inch) baking dish
with nonstick cooking spray and
wipe with a paper towel to spread
evenly; set aside.
For topping: In a large bowl,
whisk together the 3/4 cup brown
sugar, flour, the 1-1/2 teaspoons
ginger, the 1 teaspoon cinnamon
and salt. Using a pastry blender,
cut in butter until the mixture re-
sembles coarse crumbs. Stir in
walnuts and pecans; set aside.
In a very large bowl, whisk
together the 1/2 cup brown sugar,
cornstarch, the 3/4 teaspoon gin-
ger and the 1/2 teaspoon cinna-
mon. Add apples slices. Gently
toss until coated.
Transfer apple mixture to
prepared dish. Sprinkle topping
over the apples. Cover the dish
with foil.
Bake in a 375 degree F oven
for 30 minutes. Remove the foil
and bake for 25 to 30 minutes
more or until top is browned and
apples are tender. Let cool for 20
to 30 minutes before serving. If
you like, serve with ice cream or
whipped cream. Makes 8 serv-

~ McGregor Chamber of
Commerce officers for 1934 year
were President G.W. Lee, Jr.
along with Tommy D. Bailey and
Dr. Allen A. Solberg.
~ First National Bank of
McGregor was among the first of
thousands of other banks in the
United States that guaranteed de-
posits up to $2,500.
~ Twelve Bryan girls were
denied the priviledge of enterting
Texas A&M College, a school
for boys and young men, in a
decision on a mandamus petition
handed down by W.D. Davis,
District Judge.
JANUARY 14, 1944-
~ Billy Stone began working
at The Mirror in the afternoons
following school.
~ First National Bank was
urging every McGregor citizen
to buy war bonds.
~ The old 1942 motor li-
cense plates would stay on Texas
cars again in 1944,, but the min-
iature plate that went on it would
be changed to a two by two inch
square.
~ Two McGregor boys, Ben-
nie H. Stone and Jerry Ray Mc-
Donald, received commissions in
the U.S. Army Air Force’s Pilot
School. Gene Guinn, captain of
the Bulldog football team the
past season, was the first of the
present crop of seniors to be in-
ducted into the service.
JANUARY 15, 1954-
~ Mrs. Gladys Davis at Na-
ler Insurance was the authorized
agent in McGregor to sell Poll
Tax.
~ Rev. LD. Braun was in-
stalled as Pastor at Zion Lutheran
Church.
~ Mrs. Jack Hering, local
housewife and dancing instruc-
tor, was astonished to turn on the
television and find herself danc-
ing one evening. Then she real-
ized she was seeing one of the
film shorts she had made with
Mel Torme while living in Cali-
fornia. It was being televised as
a music variety over DANG-TV
Channel 34 Waco. Besides mak-
ing a number of film shorts with
name bands, Mrs. Hering ap-
peared in several feature-length
films.
JANUARY 10, 1964-
~ McGregor Bulldog Co-
captain Ronnie Moe Spradley
was a third generation McGregor
football player. He was pictured
with co-captain Doug Sloan and
his father Moe Spradley who
played for McGregor in 1941-
1942 and 1943 and his grandfa-
ther Dee, who played in 1909,
1910,1911,1912 and 1913.
~ Ernie Esch became presi-
dent of McGregor Chamber of
Commerce. Board members
were C.D. Connor, Olin Tippitt,
Dr. Eddie Payne, F.C. Luedtke
and Ray Henning.
JANUARY 10, 1974-
~ Rannel Graves was public-
ity chairman for the Olgesby Li-
ons Club Rattlesnake Hunt.
~ McGregor Bulldog John-
ny Anderson was selected as a
member of the Super Centex
Team and named the Outstand-
ing Class AA Player of the Year.
~ Crawford Coach Bill Far-
ney was named Coach of the
Year. Bill Roberson was named
outstanading player in Class B.
~ Moe Spradley and son
Ronnie Moe set up a 30 ft. wind-
mill across the street from their
homes. The tall water pump
came from the Charlie Hering
farm.
~ Miss Mary Miller became
the bride of Lee Michalewicz.
JANUARY 12, 1984-
~ McGregor EMS received
its new $35,000 modular ambu-
lance. Proudly looking it over
were volunteers Frances and
John Hudson, Maurine Vick,
Joseph Williams, Louise Walter,
Olin Howard and Mark Fitzhugh.
~ Miss Gheri Hackfeld be-
came the bride of Gary Hennig.
JANUARY 13, 1994-
~ Bulldog Nick Caufield was
named First Team All State Line-
backer and Crawford’s Shane
McDaniel was named First Team
All State Lineman.
~ Ronnie Moe Spradley
was elected president of the Mc-
Gregor Volunteer Fire Depart-
ment. Other officers were Brian
Willingham, Junior Fisher, Mike
Gladwin, Jerry Fury and James
Meadors.
~ McGregor Junior Varsity
Cheerleaders for the year were
Marcie Hannemann, Tammy
Phillips, Shelley Dietzman, Ani-
tra Cotton, Cynthia Harris and
Amanda Roedler.
JANUARY 8, 2004-
~ The McGregor Chamber
of Commerce and Agriculture of-
ficers for 2004 were Chairman of
the Board Terry Arp-State Farm
Insurance Agent, Vice Chair-
man Elect Dennis McDuffie-Mc-
Gregor City Manager, Recording
Secretary Kevin Houchin-MISD
Supt. and Treasurer Jayson Lam,
Treasurer of McGregor Extraco
Bank.
~ James and JoAnn Cox re-
tired from The McGregor Mirror
after 78 years of total service.
James worked 42 years and six
months, while JoAnn had been
with the Mirror for 35 years and
eight months.
~ Rev. Steve Heyduck be-
came the new First United Meth-
odist Church’s minister.
~ Billy Jack Waters had been
busy the last three years and four
months building what he called a
“hot rod” airplane, he built from
a kit. It is now complete and Wa-
ters took his first flight Nov. 25,
2003.
~MISD Supt. Kevin
Houchin was elected president of
McGregor’s United Fund. Paul
Harris of NCR was elected Vice
President. Christine Otter-retired
City Secretary, was elected to
serve as secretary/treasurer. Di-
rectors were Dale Evers of Cole
Funeral Home, Mynette Tay-
lor of The McGregor Mirror,
Frances Hudson, Steve Hensel
of First National Bank of Mc-
Gregor, Ray Dietzman of Trane,
Dean Elliott of Westview Manor
and Bonnie Mullens of The Mir-
ror was ex officio.
~ McGregor EMS officers
for 2004 Joseph Williams-pres-
ident, Jamie Zoch, second vice
president, Frances Hudson-sec-
retary, Jeff Esau, treasurer. Di-
rectors were Janette Anderson,
Bob Tarbet, David Lanmon and
David Anderson.
~ Free brush hauling in the
City of McGregor was official-
ly over. The City announced it
could no longer afford to provide
free brush pickup and chipping.
Citizens could subscribe for a
$3 monthly charge on their wa-
ter bills for city workers to pick
up their brush. Non-subscribers
wanting the city to pick up brush
would be charged an hourly rate.
~ Extraco Bank in Mc-
Gregor opened.
~ McGregor Bulldogs se-
lected to the Waco Tribune’s
Super Centex team were Tim
Jackson and David Haynes, Jr.
Jackson made the second team as
a linebacker. Haynes was named
to the first team as a return spe-
cialist.
Six Crawford Pirates were
named to the Waco Tribune
Herald’s Super Centex Football
team. They were Andrew Judy,
honorable mention defensive
lineman; Lee Murphy, second
team quarterback; J.R. Ewing,
first team defensive lineman;
Derek Dumas, honorable men-
tion running back; Adam Mur-
phy, honorable mention receiver
and Garrett Gonzalez, honorable
mention defensive lineman.
~ Joe Ingram of Waco won
the McGregor Mirror College
Bowl Game Contest with a very
close win over Lanny Patterson
of McGregor. Joe is a native Mc-
Gregorite and graduated from
MHS in 1953. He retired eight
years earlier from teaching mi-
crobiology at MCC for 27 years.
He lettered in all sports at MHS
and received All District baseball
honors as a freshman. His coach-
es were Jack Keltner and Carl
Warrington. He went on to play
baseball for Baylor and Texas
Tech.
~ New Methodist pastor
Steve Heyduck began his weekly
devotional entitled “Everyday
Theology” for The Mirror.
