(WOW) Words on Wheels

A ragout (pronounced ragoo)
is a French hearty stew - not to
be confused with ragu, the Ital-
ian sauce usually served over
pasta. A ragout is usually made
with beans or lentils, fresh veg-
etables and herbs. It can contain
meat, but is still a hearty meal
even if it is meatless.
Lately the media has expressed
concerns with farm-raised fish
processed in Asia. Overcrowd-
ing and polluted waters are some
of the biggest concerns. For that
reason, fish caught in local lakes
are more appealing to me and
at least I know what my family
is eating.
1 usually make this dish with
cannelli beans and catfish. My
recipe is below, but feel free
to use lentils or your favorite
beans and substitute chicken or
sausage for the fish. Obviously,
served meatless with a side salad
and crusty bread, it is a wonder-
fully nutritious meal.
Ragout of cannelli beans and
tomatoes with white fish
3 15-oz. cans cannelli beans,
rinsed and drained
4 Tbsp. canola oil
6 white fish fillets (catfish,
tilapia, halibut)
2 medium onions, chopped
1 carrot, chopped
1 rib celery, chopped
6 cloves garlic, minced
3 slices bacon, chopped
(optional)
1-1/2 cups dry white wine
2 cups chicken stock
2 tsp. fresh rosemary, minced
2 tsp. dried thyme
2 tsp. dried parsley
1 15-oz can tomato bits
1 lemon, zested and juiced
3 Tbsp. butter
Sea salt and ground pepper
to taste
Fresh parsley, chopped for
garnish.
Heat oil in skillet. Salt and
pepper fish fillets and lightly
brown in batches. Remove fish.
Saute onions, carrot, celery, gar-
lic and bacon in remaining oil
until tender. Then deglaze pan
with wine. Add stock, herbs,
beans and tomato bits. Cook
until heated through.
Return fish fillets to pan and
continue to cook covered on low
heat for about 10 minutes more.
Remove fish again and cover
to keep warm. Add lemon juice
and butter to pan and cook the
sauce for 20 minutes, allowing
it to reduce.
Serve ragout with a slotted
spoon and place a fish fillet on
top. Drizzle ragout juices over
the fish. Garnish with lemon
zest and chopped fresh parsley.

always a nice addition.

The Rains County Pub-
lic Library has much more to
offer than books. One of the
programs is Words on Wheels
(WOW). There are a number
of shut-ins in the county and
this program delivers books and
other library media to those who
still enjoy reading, or want to
watch a video. Volunteers get a
list of the wishes of the shut-in
and deliver the desired materials
once a month.
One of the earliest members
of WOW was Mildred Broiles
who died last December. She
was an avid reader and usu-
ally read at least 10 to 20 books
per month. She loved historical
books as well as Christian nov-
els. Beverly Lewis and Lauraine
Snelling were among her favor-

A gospel talent show will be
held in Emory at The House of
Prayer on Hwy. 515 on Saturday,
March 15, at noon at the McCla-
nahan Life Center, sponsored by
AG Entertainment.
The entry fee is $100 and
is non-refundable. Contestants
should sing one song, and it
must be southern gospel or gos-
pel country.
Contestants will be judged
on vocal ability, showmanship,
tightness of performance and

would like to have media deliv-
ered than there are volunteers to
do so. If you can donate a couple

is no program where the level of
appreciation of the beneficiaries
is higher.

Ely graduates from Baylor
Brandi Michelle Ely gradu-
ated December 21 from Baylor
University with a Bachelor of
Science in Nursing. She was one
of more than 780 graduates dur-
ing the fall commencement exer-
cises in the Ferrell Center on the
Baylor Campus.
Ms. Ely is the daughter of
Nelda and Johnny Ely of Emory.
She attended Rains High School
and graduated in 2010, third
in her class. She is currently
employed at Baylor Hospital in

The airman completed an

and basic warfare principles and
skills.
Airmen who complete basic
training earn four credits toward
an associate in applied science
degree through the Community
College of the Air Force.

National parks face
severe cuts: How to help
For generations, families vis-
ited national parks to experience
the best that America has to
offer. But recently, budget cuts
have taken their toll on national
park service sites nationwide.
Visitors to the 401 national
park sites across the country
support more than a quarter-mil-
lion jobs and over $30 billion
in annual spending - a huge
impact on local communities.
The recent budget cuts affect
both visitors and local business-
es that rely on those visitors to
support local economies.
Some of the damaging effects
those budget cuts are having
include major staffing short-
ages, the cancellation of spe-
cial events, the closure of hiking
trails and campgrounds and a
reduction in the monitoring of
endangered species, which puts
protected wildlife at risk.
To preserve national parks
and communities, the National
Parks Conservation Association
said Congress needs to invest in
national parks so they are pro-
tected and preserved for future
generations to enjoy. Inter-
ested citizens can contact their
senators and representatives at

restore funding to the national
park service budget, and can
visit www.npca.
