Rains County Leader staff
1 grew up with a single work-
ing mother. Many nights we had
breakfast for dinner. Bet you have
too! Scrambled eggs, bacon, pan-
cakes, french toast and more.
Following are some updated
breakfast dishes - simple and
easy to make. I hope you try and
enjoy.
Dinner Frittata
Serves: 6
2 tsp. olive oil
3 tsp. butter
2 green onions, chopped
1/2 red bell pepper, cut into
slivers
1 garlic clove, chopped
1 lb. Yukon Gold potatoes,
thinly sliced (I use red-skins)
6 eggs
3 Tbsp. heavy cream
1 pinch dried thyme and oreg-
ano
1/4 tsp. salt
Freshly ground black pepper
1/4 c. Gray ere cheese
Preheat oven to 400°.

a heavy ovenproof skillet (or a
well-seasoned iron skillet). Heat
over medium heat until butter
melts. Add green onions, bell
pepper and garlic; saute about 3
minutes. Scatter potatoes over
all. Cover and cook until pota-
toes are fork-tender, 10 to 12
minutes.
Whisk together eggs, cream,
thyme, oregano, salt and pep-
per. When potatoes are tender,
pour egg mixture evenly over top
of potatoes. Jiggle pan slight-
ly to make sure eggs run down
between potatoes.
Sprinkle cheese evenly over
top of eggs. Place pan in oven
and bake 8 to 10 minutes, until
eggs are soft-set and cheese is
melted. Remove from oven. Let
stand about 3 minutes. Cut into
wedges and serve with slices of
crusty buttered bread and jam.
NOTE: My husband is a
“meat” man. He loves this dish
but I brown 1 lb. breakfast sau-
sage and sprinkle over the cooked
potatoes before adding the egg
mixture.
Spinach and Red Pepper Bake
Serves: 4
5 eggs
3/4 c. milk
1 Tbsp. yellow mustard
1/2 tsp. salt
1/4 tsp. black pepper
4 slices bread, cut into cubes
1 c. frozen spinach, thawed
and squeezed dry
2 roasted red peppers (from a
jar), drained and sliced
3/4 c. grated cheddar cheese
Preheat oven to 350°.
Spray 8” square baking dish
with cooking spray.
In mixing bowl, whisk togeth-
er eggs, milk, mustard, salt and
black pepper. Spread the bread
cubes on the bottom of the bak-
ing dish. Top with the spinach,
peppers and cheese. Pour the egg
mixture over the top. Cover and
refrigerate overnight (or for at
least 2 hours).
Bake for about 50 minutes,
until the center is puffed and set.
NOTE: You can double the
ingredients and bake in a 9x13
pan for about one hour.

Fresh Pear Cake
2 c. sugar
3 eggs, beaten
1-1/2 c. vegetable oil
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla extract
1 tsp. cinnamon
3 c. thinly sliced pears
1 c. walnuts or pecans, chopped
(optional)
Preheat oven to 350°. Com-
bine sugar, eggs, oil; beat well.
Add dry ingredients one cup at a
time and mix well. Stir in pears ,
add vanilla and mix well.
Spoon into bundt pan; bake
one hour.
While still warm, glaze top
with powdered sugar and melted
butter mixture.

chili and stew luncheon

The Women’s Service Club
wants to let each and every one
know that the chili/stew luncheon
was a success and that we appre-
ciate all of our sponsors, friends
and families for your support. It
could not have been what it was
without God and you.
We will host a Thanksgiv-
ing Tasting Bee Fundraiser Lun-
cheon on November 17, 2011,
from 11:00 a.m.-3:00 p.m. at the
Rose Community Center. Lunch,
dessert and drink for $8.00 or
all you can eat for $10.00. We
will also have carry-outs. Please
tell your families and friends
about it.
The Women’s Service Club
maintains the Rose Community
