Sugar helps most canned fruit
hold its shape, color and flavor.
But sugar is not necessary to
keep fruit from spoiling- When
canning without sugar, use the
strained juice from crushed fruit
which has been heated. Process
unsweetened fruit the same as
sweetened fruit.
Make sugar syrup according
to availability of sugar and per-
sonal taste. Thin syrtip,
cup sugar to 3 cups water, or
juice yields about 3 1-4 ctups,
medium syrup, one cup sugar to
2 cups water yields about 2 3-8
and for heavy syrup, one cup
sugar to one cup water yields
about one and a half cups juice
The general war time rule is
1 lb. or two cups of sugar to four
quarts of fruit when it is well
packed. A thin syrup is very
desirgble from a nutritious
standpoint.
Sugar Substitutes
Corn syrup or corn sugar may
be substituted for part or all of
sugar. One cup of sugar and
two cups of corn syrup to 6 cups
of water makes a desirable
syrup. This is a thin syrup. If
corn syrup is to replace all of
the sugar, use one-half to three
fourths of cup of syrup to one
cup of water.
Brown sugar or syrups that
have strong flavor, such as sor-
I ghum is not desirable for can-
| ning.
Honey may be used to replace
a sma!l part of the sugar. It
affects the flavor of the fruit
more than corn syrup. It is
very good with canned figs. It
is also good with fruit pickles.
Never use saccharin in cann-
ing. Heat makes it bitter. If
saccharin is used, it should be
added at the time you serve the
frut. Consult a doctor before
using it, because too much sac-
tarin may be harmful ,
Heat Reduces

College Station, July 11.—
Every houi’s labor on the farm
will be valuable this year when
help is scarce, and farm leaders
are hoping that there will be a
reduction in the number of farm
workers who are annually over-
come by heat exhaustion and sun-
stroke, says E. C. Martin, State
chairman for the Farm Safety
Week program, and Assistant
State Agent for the A. and M.
College Extension Service. Nat-
ional Farm Safety Week has
been set for July 22-28.
“According to the National Saf-
ety Council, heat exhaustion and
sunstrike axe two entirely dif-
ferent things, although both may
seem to result from exposure
to high external heat. It is easy
to tell one from the other. With
heat exhaustion the patient’s skin
Is cold and clammy, while with
sunstroke, the skin is hot and
dry,’’ Mr. Martin said.
“A simple rule may serve as
a guide and avoid confusion re-
garding the treatment,’’ states
Mr. Martin. “Briefly, it is this:
If the patient is cold, make him
warm; if he is hot, make him
cool.’’
In sunstroke, place the pat-
ient in a cool shady spot, remove
tight fitting clothing and place
h'm on hi? back with head and
shoulders raised. Apply ice cold
cloths to his head and cool the
body gradually with a cool bath.
Call a doctor as soon as possible
and administer cool drinks, not
cold, if the patient is conscious.
The National Safety Council
suggests measures to prevent
heat exhaustion among farm
workers: Avoid alcohol and ice
water; drink cool water and lem-
on or other citrus fruit juices.
Eat vegetables and llgh
clothing: rvoid over-fatigue;
bathe daily; get plen*v of sleep
Replace body salts lost through
perspiration by salting food,
drinking salt in water, or by tak-
ing salt tablets 8orl0 ten-grain-
tablets daily). Keep the head cov-
ered, while in the sun, and the
body, including arms and legs
with loose fitting comfortable
clothing.

To Remain In Italy
Rome, July 5.—Six veteran
American Air Units in Italy have
been ordered to remain in Eur-
ope as part of the occupation
forces. All of them have had
more than two years overseas
service. *
The commander of the Ameri-
can Air Forces in the Mediterra-
nean, Major General J. M. Bey-
ans, has announced that the units
to be had in Europe are the 2nd
97th, and 99th Heavy Bombard-
ment Groups, the 79th Fighter
Group and the 416 and 417th
Night Fighter Groups.
