O UNSET over the prairies — the

into mountain peaks ol clouds as
the sun sets. In the lovely garden
of Dr. and Mrs. Janies Elliott a
barbecue is going on. in the big
Old Dutch barbecue oven and grill.
This barbecue grill is 'the most in-
teresting 1 have ever seen, com-
plete not only with the oven for
outdoor baking of beans and hot
breads, but with niches built in to
hold the old fashioned utensils used
in preparing these outdoor picnics
—large bowls, a big iron pot for
boiling corn and making stew* and
a huge kettle for beating water for
coffee. 1'he oven and brick work
stand about seven feet high in tbe
back of the garden and completely
shield the tool house which is built
back of It. In front of the brick
' oven is built the barbecue grill,
of double size. And on the square
stone plaza stands a huge table,
with a Hat stone top and brick
base; wooden kegs with tlat cush-
ioned tops furnish seats.
A barbecue in Kansas City may
mean barbecued chicken, steak or
hamburgers, served with split but-
tered rolls; a big tossed salad, and
perhaps fresh corn on the cob; and
tor dessert anything that can be
eaten out of hand, such as fine
fruit, wedges of cake, or turn over
pies, and big cups of coffee. And
believe me. no yachtsman from
I,ong Island or movie star from
Hollywood could wish for a more
delightful setting.
At this particular barbecue w’e
had hamburgers, made with a spe- ,
cial barbecue sauce.
Barbecued Hamburgers
(for 6 people)
First prepare the sauce as fol-
lows: Fry two chopped onions in
two tablespoons butter. Add one
half cup tomato catsup, one half
tablespoon vinegar, one tablespoon
corn syrup, one tablespoon Worces-
tershire sauce, one teaspoon chili
powder, one half teaspoon salt and
a little pepper. Cook for five min-
utes. Then grill the hamburgers,
basting while cooking with the bar-
becue sauce. If you are serving a
large crowd, better season the chop-
ped meat with salt and pepper;
pack it into loaf pans; chill it well,
and cut in half-inch slices for broil-
ing. It is easier to handle and you
can get more on the grill at one
time.
The Elliotts sometimes serve a
hundred guests in their garden.
When it s time for coffee, twilight
has fallen; so they turn on tbe
flood lights and trays of steaming
hot cups of coffee appear like mag-
ic from behind the trees, where
the electric cotTee urns we plee»d.
