sation with a Record and Chronicle
--representative said that he felt ctn-
siderably “hoped up” over the tur-
key market for Denton this year —
that so far he hud received a ixrge
number and that the prospects were
ejtremely good for more and tha1’. he
expected Denton to market probably
more turkeys this year than former
years.
A Record and Chronicle represen
tatlve called at the Elbert Produce
company last week and was shown
through, the turkey dressing depart ;
menl, which was something entirely
new to him. One thing noticeable to
the writer was the method«of kHUn;;
the birds. A knife Is stuck through
the upjier part of the mouth into th t
brain and then the bird is hung with
head doth to a rope and the turkey
bleeds to death. As soon as the tur-
key commences to bleed the feathei a
rela* and they tome off very readily
without scalding. After picking the
dressed turkeys are put on cold stor-
age and shipped to the Eastern mar-
kets.
Mr. Elbert said that it was very
possible that G. W. Elbert A Co.
would install a cold storage plant
in Dentoq some time next spring—
in fact, that if he continued in the
present business the cold storage was
an assured thing as it would be ab-
solutely essential to the continuance
