Scald milk; stir in sugar, salt and margarine or butter; coed to luke-
warm. Measure water into large bowl (warm, not hot, water tor active
dry yeast; lukewarm water for compressed yeast). Sprinkle or crumble
in yeast; stir until dissolved. Snr in lukewarm milk mixture, egg, and
1 1 i cups flour. Heat until smooth Stir in lemon rind, mace and remain-
ing flour to make soft dough. I urn out on floured board and knead until
smooth and clastic, about 10 minutes. Place in greased bowl, turning
«>nce to grease top of dough, (.over; let rise in warm place, free from
draft, until doubled in bulk, about I* < hours Punch down; turn out
on lightly floured board. Shape into roll 12 inches long Cut into 12
equal pieces. Form each into smooth ball Place on greased baking sheet
