As the summer growing season comes
to an end. consider preserving herbs
for use this winter. A thoughtful hostess
gift or Christmas gift for a favorite cook,
herbs preserved at home have much
better, more intense flavor than those
commercially prepared
There are several methods - experi-
ment to see which one you prefer:
1 FREEZER - Pack fresh herbs in
small plastic freezer bags. Label and use
as necessary.
Herb butter - Add 2-4 T. finely chopped
herbs to % cup softened butter. Freeze
in 1-2 tablespoons pats. Marjoram, dill
and basil freeze well.
2. DRY - For even drying, place herbs
in a single layer on a rack which has been
covered with muslin or paper towels.

Research on using a high quality
olive oil such as Bertolli to reduce
blood pressure was published re-
cently in the Journal of the Ameri-
can Medical Association by Dr
Stephen Fortmann of the Center for
Research in Disease Prevention at
the Stanford University School of
Medicine The article reported
“ that the low incidence of coronary
heart disease and the low blood
pressures in the Mediterranean re-
lative to central and northern
Europe may lie due in part to the
greater use of olive oil and monoun-
saturated fats in general ”
According to Dr. Fortmann, the
original study requires an expanded
program of research, but the pre-
liminary results suggest a strong
link between lower blood pressure
and monounsaturated fats as found
in olive oil.
The National Heart. Blood and
Lung Institute of the National In-
stitutes of Health along with the

Adrian Rincon, the jail escapee,
was never sighted again by law
enforcement officers, however it
was later learned that a citizen had
positively seen the escapee at about
5 p.m. August 30th in the brush
alongside I-36 going south. Officers
were able to track Rincon to an area
adjacent to the Highway Depart-
ment rest area about six miles south
of Cotulla. Speculation is that
Rincon then caught a ride to Laredo
(Mexico) with some southbound
motorist.
According to Sheriff Avant, the
assistance given by area law en-
forcement officers was most ap-
preciated, especially officers of the
local Border Patrol station who
continued to search for the escapee
for several days, mostly tracking on-
foot.

3. VINEGAR - Fill a clean jar with herb
cuttings. It is best to use scissors for
cutting leaves. Crush or bruise slightly.
