RECIPE FOR GREEN TOMATO MINCEMEAT
Also Good Sandwich Filling
3 pounds of green tomatoes
8 cups brown sugar
2 tablespoons salt
1 cup suet
1 cup vinegar
2 tablespoons cinnamon
2 teaspoons cloves
1 teaspoon nutmeg
3 pounds apples
2 pounds raisins (chopped)
Orange peel, if desired.
Directions: Chop the tomatoes and drain; measure
the juice and add equal amount of water to the pulp.
Scald mixture and drain off the liquid. Repeat twice this
process of adding fresh water, scalding and draining. To
the above mixture add chopped apples, sugar, raisins,
salt and suet. Cook until clear. Add remaining ingredients
and cook mixture until thick. Pack immediately
into clean hot jars, and seal at once.

BAVARIAN PLUM PUDDING
1 package lemon jello
1 pint boiling water
Dash of salt
3-4 cup raisins, finely chopped
1-4 cup citron, finely chopped
3-4 cup dates, finely chopped
3-4 cup walnut meats, finely chopped
1-4 cup grape-nuts
1-2 teaspoon cinnamon
1-4 teaspoon cloves
Dissolve jello in boiling water. Add salt. Chill.
When slightly thickened add fruits, nuts, grape-nuts and
spices. Turn into molds and chill until firm. Serve with
whipped cream flavored with nutmeg or with pudding
sauce. Serves eight.
