Court Clerk Bonnie Russell presents Attorney Joseph Hens-
ley with an engraved comanto of the eight years he has
served as judge of the Bella ire Corporation Court. Mrs.
Russell made the presentation at a farewell get together
last Tuesday evening after Judge Hensley presided for the
last time. He will join the University of Houston faculty as
a professor of law this fall.

It’s easy to do when you plan
the week-end around versatile
chicken, dishes, because you can
prepare most of the meals be-
fore the week-end even starts.
Here are some hints for wonder-
ful family eating with a mini-
mum of work. After all, the lady
of the house should have a share
of the week-end fun, too:
Lay in a supply of fryers, suf-
ficient for your family (they’re
particularly plentiful and eco-
nomical.)
Fry up several of these ac-
cording to your favorite recipe,
and then freeze the fried chicken
in your freezer or the freezing
compartment of your refrigera-
tor. Research shows that chick-
en frozen after frying, tastes
just as good up to four days
later. Now you’ll have a ready-
made main dish for any day of
the week-end merely by remov-
ing amount needed from freezer
a few hours before serving. Also
it provides a ready-to-travel
dish" for picnics, outings or
beach parties. So if you choose
chicken- for some of your Labor-
Day week-end meals, you’ll en-
joy delicious eating and a more
carefree holiday atmosphere.
Franks and cold cuts are also
popular and prices are reason-
able. There is a wide variety of
canned meats to help the busy
cook — steaks-in-gravy, meat
stews, chili con carne, ham, spa-
ghetti meat dishes and corned
-beef hash, are a fe wthat are
available. Many of these can be
served, as they come from the
can; others have more taste ap-
peal when heated.
Heap the fruit bowl With
grapes, plums, peaches, pears,
lemons and bananas, and have a
supply of melons. Any one or
a combination will make good
snacks, salads, desserts and
breakfast. It’s a wonderful time
to make meals appealing with
fresh fruits.
A wide choice of fresh vege-
tables is available at most pro-
duce counters. Eggplant, green
peppers, carrots, cucumbers, cel-
ery, head lettuce and red pota-
toes are among the more eco-
nomical choices. New crop sweet
potatoes are more plentiful. To-
mato quality varies, prices are
reasonable and flavor is good.
