Country Cooking is being shared
this week from the kitchen of Phil
and Liz Williams. Being married for
seven years, they have lived all this
time in the Blossom area.
Phil and Liz have four children: a
daughter, Marci$ and husband Doug
Thompson o Paris; daughters Becky
and Regina of Tyler and son Chad of
the home.
Phil and Liz work at Uarco in Paris
and Liz has made this ho- career for
the past 19 years.
Her hobbies include sewing, mak-
ing crafts, T-shirts, jewelry, cooking,
swimming, going to baseball and
basketball games, shopping at craft
stores and collecting cookbooks.
She says they like to watch sports
games whether they know anyone
playing or not They like all the area
school games plus games in Dallas,
etc. Liz makes a lot of her and Mar-
cie's clothing. She enjoys painting
and appliquing on T-shirts and sells
some of them occasionally. She also
loves to make earrings, all colors and
all fashions. Most of these are for
herself and her daughters, but she
does give a lot to friends.
Liz says "Just face it, I'm a craft
person. I enjoy antiques and country
items." Phil calls it all junk but that's
not Liz’s definition of it.
Cooking breads and sweets is Liz's
favorite foods to cook. However, Phil
doesn't like either of these so she
doesn't cook them as much as she
would like. Liz started making des-
serts as a young girl when she helped
out at home. She started making
breads in high school while taking a
homemaking class.
Swimming is another enjoyment
Liz loves. She would like to swim
everyday but only manages about 3
or 4 times a week. She thinks this is
the best therapy anyone can have.
She collects and cuts out recipes
from everything she sees. She has
chosen a variety of foods to shae with
you this week.
The Steak Strips have been a fa-
vorite of every member of her family
for the past seven years. She found
the recipe in a magazine. The Enchi-
lada recipe has been around about 10
years and came from a friend at work.
The Quick Bread recipe is fast enough
to start it and bake it for supper. She
mixes the dough first, lets it rise on
her oven door, and by the time she
gets everything finished for supper,
the rolls are ready to bake.
The Scratch Combread was one
she has continued with her through
the years. She said it seems she has
always made it Marcie encouraged
her to share this recipe, it's one of her
favorites. The Brownie recipe is one
she also has used since a youngster.
We hope you enjoy these recipes.

for the requests. We have received an
Almond Joy Cake rec ipe from JeNola
Cavender, Linda Eilers and Tommy
Williams and will be sharing it with
readers in the future. An Orange Slice
Cake recipe was sent in by Tommy

Coconut Cuke
1 Golden Butter cake mix (add 1/2 cup
oil)
Cook in (heath pan as directed.
Icing:
1-12 oz. Cool Whip
1 8 oz. Sour cream
2 cups sugar
1 large can coconut (1/2 in icing and 1/
2 on top)
Refrigerate
Brownies
2/3 cup ahortening
2 cups sugar
6 tbsp. cocoa
1/2 tsp. salt
1 cup nuts
4 eggs
2 tsp. vanilla
1 ifl cups flour
1 tsp. baking powder
Cream shortening and sugar. Add
Steak Strips
Cut 1 1/2 lbs. round steak into strips.
Place meat in dry electric skillet on 400.
Brown, then remove, but leave fat-mix
1 tbsp. flour well. Put meat in again, turn
heat down to 300. Cut up 1 onion and 1
green pepper. Mix together:
3 tbsp. soy sauce
1/2 cup catsup
1/2 cup water
1 tbsp. black pepper
Pour over steak, cook on low (100) for
10 minutes, then simmer til steak is
tender. Serve over rice. Serves 4.
Enchiladas
2 lbs. ground meat (browned)
1 lb. American cheese (grated)
2 pkgs. tortillas
2 onions (chopped)
Roll meat, cheese and onion in tortil-
las and place in pan. Dip tortillasin
grease to soften before filling.
Sauce:
3 cups boiling water
1 tsp. garlic
1/2 tsp. salt
1/2 tap. oregano
3 tsp. chili powder
2 heaping tsps. flour mixed with enough
cold water to make a runny paste
1 can chili
Mix all ingredients and heat until
chili melts, pour over enchiladas. Heat
in oven 30-45 minutes or until hot Can
sprinkle extra grated cheese on top before
heating.
Quick Bread
2 pkgs. yeast
6 tbsp. sugar
1 1/2 cup warm water
4 tbsp. oil
1 tsp. salt
4 cups flour, more if needed to make
stiff
Dissolve yeast and sugar in warm
water. Add other ingredients and mix
well. Let rise til double before baking.
Put pan on oven door to speed up rising.
Bake at 400 til brown.
Scratch Cornhread
2 cups white commeal
2 tbsp. flour
2 tbsp. sugar
2 tsp. baking powder
1 tsp. salt
1/2 tsp. soda
2 eggs
2 cups buttermilk
Mix all dry ingredients and add but-
termilk and eggs, mix well. Put about 12
tbsp. meat grease in 9" iron skillet and
heat til hot. Pour 3 or 4 tbsp. into batter
and stir well. Put 1 to 2 tbsp. commeal
into remaining grease and brown before
pouring batter into skillet. Cook in pre
heated 400 oven for 30 minutes or til
brown.

Adam Chase Jarecki, Faye Gandy's
grandson, has been celebrating his
third birthday with parties and lots of
goodies. His aunt, Alice Jean, left
DFW Thursday tocelebrate with them
in Las Vegas.
Jimmie King, Clyde Mitchell who
have had eye surgery are both doing
fine.

Clyde Smith
Dies September 7
Clyde Smith, 65, of Red River
Haven Nursing Home, died there at
11 p.m. Saturday, September 7.
Graveside services were scheduled
for 1 p.m. Monday, September 9 at
Oaklawn Cemetery in Cooper under
the direction of Bogata Funeral Home
with the Rev. Randy Sinclair offici-
ating.
Mr. Smith was bom February 7,
1926 in Ellis County, a son of Cye
and Kate Lou Clem Smith. He was a
member of the Cooper United Meth-
odist Church.
Surviving are two sisters, Juanita
Kelly of Hagansport and Norene
Newman of Dallas; a brother, Mab-
ron Smith of Dallas; three nieces and
three nephews.
Nephews served as pallbearers.
Dakota Joe Rozell
Dies September 10
Dakota Joe Rozell, infant son of
Russell and Elizabeth Rozell of
Bogata, died T uesday, September 10
in Baylor University Medical Center
in Dallas.
Funeral services will be held at 4
p.m. Thursday, September 12 in the
First Baptist Church of Bogata with
the Rev. Bob Bush and the Rev.
George Thomas officiating. Burial
will be in Bogata Cemetery under the
direction of Bogata Funeral Home.
He was bom September 2 in Dal-
las. He is survived by his parents; his
sister, Mallory of Bogata; grandpar-
ents, Neil and Francis Rozell of
Bogata and B.J. and Patsy Farmer of
Eagletown, OK; great-grandmother,
Mrs. William Rozell of Bogata and
great-grandfather, Vernon Luttrell of
Eagletown.
Pallbearers will be David Rozell,
Scott and Steve Farmer.

Friends were sorry to learn of the
death of Dean Ward of Bogata Tues-
day. He married Barbara Webb, for-
merly of Cunningham. Sympathy is
extended to the family.
