Our featured cook this week
is Mrs. Jodie Taylor, who has
been a resident of Rains County
since 1993. Jodie moved, here
from Norfolk, Virginia, where
she resided for 4'A years. She
tells me that she likes the calm,
quiet atmosphere of Rains
County; the people; and it's far
away from the stress of the city.
Jodie's husband, James, who
is employed with Powell-Esco
in Greenville as a welder, has
been welding since he was nine
years old. James was in the
Navy stationed at Little Creek,
Virginia for 4'h years as a
Boatswains mate.
Jodie calls herself a "stay-at-
home mom," although she
worked as a title clerk at a
Dodge dealership for 3-1/2
years in Norfolk. She attended
Northwestern University in
Evanston, Illinois for 2 years,
and has an associates degree in
in music, and plays seven dif-
ferent instruments, including
flute, oboe, clarinet, drums, sax-
ophone, electric bass guitar and
some trumpet.
The Taylors live on Hwy. 19
North about 3 miles outside of
town in a mobile home.
James's parents, Uleta and
Jim Taylor, who live nearby
them, have lived in Emory
since 1990, but all Jodie’s fami-
ly is in Illinois.

where she had just won first
prize in a singing contest. They
married in July 1995.
They both enjoy camping and
fishing, and Jodie enjoys writ-
ing poetry for stress relief.
James and Jodie have four
children, Nathaniel, 9, Brittany,
3, Rebecca, 6, and Jamie Lee, 6
months. Nathan and Becky
attend Rains Elementary
School.
Jodie tells me that her family
has no particular "specialties."
She says that they will try any-
thing once, but the family
favorite is homemade spaghetti
and sauce.
She says her kitchen isn't
very big, so she mostly cooks
alone, but occasionally every-
one pitches in.

Original Italian
Spaghetti Sauce
2 tbsp. veg. oil
2 20-oz. cans tomato puree
2 12-oz. cans tomato paste
1 20-oz. can peeled, whole
tomatoes
1 Ig. onion, peeled & chopped
1 med. potato, peeled & cubed
2 tbsp. minced garlic
1 whole bay leaf
3 tbsp. oregano
1 tsp marjoram (optional)
2 tsp. sugar
salt & pepper to taste
2 lbs. mikl Italian sausage (links,
cooked, chopped into 3rpieces)
1y.lbs. lean ground beef or
turkey, cooked & drained.
In a large stock pot, place oil
& onions. And, over a low flame,
brown till tender. Add puree, 2
cans (40 oz.) water, paste,
whole tomatoes, potato, garlic,
'/i c. warm milk (105-115°)
2-2'/2 c. flour
1 tbsp. sugar
'/> tsp. salt
'/i c. chilled butter cut into small

1 Ig. egg, lightly beaten
Filling
3 med. golden delicious apples,
cored & thinly sliced
2 tbsp. sugar
1 tsp. cinnamon
Glaze & Icing
1 Ig. egg
1 tsp. water
1 c. confectioners sugar
1 tbsp. water
In a small bowl, dissolve yeast
in milk. Let stand until foamy,
5-10 minutes.
In a large bowl, mix 2 c. flour,
sugar and salt. Using a pastry
blender or 2 knives, cut butter
into flour mixture until coarse
crumbs form. Add yeast mix-
ture to flour mixture. Add egg,
mix just until flour mixture is
moistened.
On a floured surface, knead
dough just until it holds togeth-
er, 1-2 minutes, adding more
flour to prevent sticking.
Grease a baking sheet. Divide
dough in half. Using a floured
rolling pin, roll each dough half
into a 12x8 strip. Place in a
prepared baking sheet.
To prepare filling, mix togeth-
er all ingredients. Spoon half of
filling in a 4" wide strip length-
wise down center of each
dough strip. Cut dough on both
sides of filling crosswise into 1"
strips just to filling. Place strips
over filling, alternating sides
and overlapping slightly. When
braiding dough strips, be sure
that the end of each strip is cov-
ered by the next strip. Pinch
ends to seal. Cover loosely with
a damp cloth; let rise in a warm
place until puffy, 1 hour.
Preheat oven to 425°. To pre-
pare glaze, mix together egg
and one tsp. water. Brush over
loaves. Bake loaves until they
are golden brown, 15-20 min.
To prepare icing, mix confec-
tioners sugar & 1 tbsp of water.
Drizzle over loaves. Place each
loaf on a wire rack to cool.
Pumpkin Whitechip
Walnut Bars
2 c. flour
2 tsp. cinnamon
1 tsp. ground cloves
1 tsp. soda
1 c. softened butter
'h c. sugar
’/a c. brown sugar
1 15 or 16 oz. can solid pack
pumpkin
1 egg
2 tsp. vanilla
12 oz. white chocolate chips
7s c. chopped walnuts
Combine flour, cinnamon,
cloves, and soda in a bowl. Beat
butter and sugars in a large
bowl till creamy, add pumpkin,
egg and vanilla. Gradually add
flour mixture, being sure to mix
well. Stir in V/i c. chips and
nuts, mix well. Spread into a
• 15'/2 x1072 inch jelly roll pan.
Bake for 18-22 min., at 350°.
Cool on a wire rack.
Melt remaining chips, stir till
smooth. Place melted chips
into a sandwich bag, cut corner
like a frosting bag (small), driz-
zle chips over cake. Cut into
bars.
Tips for

You may determine the age

Over med-low heat, cover &
cook for 4-5 hours, stirring
once at least every hour. Mean-
while, cook sausage and beef
or turkey. Cut up sausage, and
drain beef or turkey. Set in
fridge till sauce has thickened
(4-5 Hours). Add sausage &
beef, cook an additional 2-3
hours to let the sauce absorb
the flavor of the meat. Serve
over any pasta. If sausage is
replaced with bulk-type
sausage, this sauce makes an
excellent pizza or lasagna
sauce!
Tangy Texas Taco
Rice
2 lbs. lean ground beef
1 16 oz. jar mild salsa
2 tbsp. crushed red peppers
3 tbsp. Worcestershire sauce
1 y> tsp. seasoned salt
1 Ig. can whole kernel corn
4 c. shredded Cheddar cheese
4 c. long-grain rice
2 pkgs. taco seasoning
1y. c. water
Crumble & cook ground beef
till well done, drain off fat.
Return to pan, add water, sal-
sa, peppers, Worcestershire
sauce, seasoned salt & taco
seasonings. Let simmer on low
heat 15-20 min. While simmer-
ing, cook rice according to
directions on package. Five min-
utes before rice is through,
drain and add corn to rice, to
let steam. Set an additional five
minutes without heat on burner.
In a large bowl, place rice/corn
mixture in bottom, place cheese
on top, then add ground beef
mixture, mix well. At first, mix-
ture will seem thin, after mix-
ing well, cover with foil and let
cool 5-10 min. Uncover & stir
mixture a few times. Serve in
warm tortillas, or with flour tor-

After a busy month and not
feeling too wellwe are getting
relief from cooler weather ana
some rain. We have to keep in
step with this nice weather.
I came across a lot of grass
in the garden that sure made me
tired to look at it.The beans
were lost but not forgotten.
Well,the children are hack in
school for the year. I know
they are glad to be back
learning and getting good
grades.
I took time out from picking
peas and beans and sat under
the trees and rest and sing glory
for its all done. We love the
shelling peas part. I learned a
lot about resting when I was
young. I would always fall
asleep on my cotton sack
day.

winter and pick some oranges
and eat all the way home. Sure
would love to see the
mountains and our national
parks.
I have been writing down
some family history all week.

nearly every day. Sometimes
we were out picking cotton at
change in that time for us
today.
We had some surprise
visitors today. It was Mike,
Vale and Danielle Horne of
GrapevineThey were here on a
short visit. Danielle had a good
time seeing the cows, chickens
and old Bud the horse. They
had been to Longview looking
at log homes. They want to
move to East Texas.
We were in Longview
Wednesday for R. L. Miller's
surgery. He did real well and
came home Friday. We had a
visit by phone with him
Saturday.He is doing fine. He
will stay in the house for a few
days. Odell and Sam Hargrove
went to Longview Saturday and
said Geraldine and R.L. was
doing some better that day.
R.L. had walked some while
they were there.
Had a call from Windell
Horne this week. His dad,
C.W. Horne had been pretty
sick but is better.
Our prayer concerns are for
the lost, our church, our
country, our pastor and family,
our friends, our families, our
neighbors, our school children
ana all the sick that is on our
list.
Saturday the 24th of August
will be the ment breakfast at
the church.
Mrs. Avell Foster will have
knee surgery the 28th of
August. Mrs. Sally Dittman
has gone to Dallas for a visit
with her family that lives
there.
Janet Blanton, Mae Miller,
Audrey Hill gave Lucy Magee
a visit this week. She has not
been feeling tcowell. She .will
see her doctor Tuesday. She had
trouble with her back.
Dennis and Tena Florez took
a trip by plane to see some of
his family.
We went over to visit with
Walter and Vonda Ragsdale this
week to see their pretty
chickens.
We went by Paul and Carol
Foster's Saturday afternoon for
a visit. Believe me, I never
knew all the wonders and
beauty our state has within its
borders. It would take some
time to see everything. I would
love to go to the valley this
